A blend of 8 months to 2 years old lambic matured with rhubarb at a ratio of around 300 grams per liter.

"Crianza belongs to the family of Flemish Red-Brown ales. Born out of a mixed fermentation, she spent more than a year in oak barrels. Her body has copper reflections, and her aspect is limpid. Her foam is beige and creamy, with a nice hold. She smells like Northern cherries, with a woody and winey accent, and a slightly animal touch given by the Brettanomyces yeast. In the mouth, these flavors are completed by stewed apples, notes of Agen plums, blackberries, spices (cinnamon, cloves, licorice), and a very lightly caramelized touch of malt and biscuit. Her slightly sour character makes her surprisingly refreshing."

This triple mashed Imperial Stout spent three months in steel before being infused with thoughtful amounts of Madagascan Vanilla beans & tonka beans. "Oud Bruin is a typical style of our region between Kortrijk and Oudenaarde. This beer is a blend of our own young and 2 year old wood aged oud bruin. For complexity we added some of the Marvelous "Jacobins Foederbier" from pur neighbors in Bellegem, brewery Vanderghinste."

"For this lambic-braggot (= a beer-mead hybrid) 'Could Heaven Ever Be Like This', cherries and cassis mead from De Mederie were blended with young and three-year-old lambic from 3 Fonteinen in a ratio of around 50%-50%. For the name, we found inspiration in the song 'Could Heaven Ever Be Like This' by jazz drummer Idris Muhammad; a song that represents the clash of all the subtleties, funkiness, nuances and liveliness of both worlds, intertwined in this bottle. The fitting label design came from @Letterlik."

"For this Schaarbeekse Kriek, we macerated locally grown and manually harvested sour cherries for almost fourteen months in wooden barrels, with both one-year and two-year old lambik. The final fruit intensity is about 350 grams of Schaarbeekse per litre of finished Schaarbeekse Kriek. The average age of this beer upon release will be around two-and-a-half years. 100% 3 Fonteinen."
