"De Dulle Teve is brewed in the tradition of a Belgian Triple. Its high density stems from large amounts of pale malt increased with pale candi sugar in the brew kettle. Unfiltered, unpasteurized, bottle-conditioned. De Dulle Teve keeps two to three years without major changes in taste. Further maturing, up to 10 years, will cause it to darken a little and lose some of its bitterness. The bittering of about 30 IBU is due to Goldings hops in the brew kettle."

It was made with lambics from 10 diffrent Brewers and blenders of gueuze: Boon, De Oude Cam, De Troch, Hanssens, Tilquin, Lambiek Fabriek, Lindemans, Mort Subite, Oud Beersel and Timmermans. Season 2018-2019 Assemblage #76. bottled on 23/05/19. Blend made from 5 different barrels (including an Amontillado Sherry barrel) originating from 7 different brews. The Oude Lambic comes from 2 different barrels and two different brews and represents around 40% of the blend. The oldest lambic was brewed on 12th January 2016. The average age of the lambis at bottling is 19 months.

Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons. bbd 18/11/2024

"Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."
