Season 2021-2022. Bottled on 28/062/2022. "For this Strenge Winter, we brewed a full malt wort with the addition of candied sugar on the coolship. This wort was brewed on April 16th 2020. We left it for more than two years to age on three different barrels. Upon bottling, we blended with some young lambik for continued bottle fermentation, as well as a small part of reduced wort from a Nocturne brew. The weighted average age of the blend upon bottling was therefore more than 23 months."

"Barrel-aged wild blond beer with elderflower. Once a year we brew a special blend for Dauw. After initial fermentation, when sugars are still present, we infuse the beer for one day with freshly picked elderflower. This results in an overwhelmingly aromatic beer, which becomes more rounded after long barrel aging. By mixing 3 years of vintages, we bring a lot of complexity to the beer. The young barrels add bitterness and floral scents, whereas the older barrels add ripeness and soften the character. Dew is a nice sour beer with rich elderflower, green pepper and citrus. Pack Containing 2 bottles:
- Gris Sur Senne Reserva is inspired by an orange wine x gueuze fantasy. The grapes in the bottle come from two different harvests, 2023 and 2024, while the lambic originates from the 2022 and 2023 vintages.
- Edelrood Reserva is a blend of Pinot Noir from the 2023 Alsace harvest and Kriek Lambic vinified as a wine. This single barrel has undergone an additional year of oak ageing on top of the original Edelrood 2024.

"This beer is created by adding green walnuts to beer that was aged on wooden barrels for at least one year. We picked the nuts in july last year in the garden of a friend. They were harvested when they were still greeen before the wooden shell started to appear. The young fruit gives a herbal, nutty aroma to the beer. "For this blend, Ambreus, along with Jean-Pierre, Erik, Pieter-Jan, and Bastiaan, selected "10 Years" of Villa Servais, lambic from Lindemans, De Troch, and Den Herberg.
The blend is made from four 225-liter barrels: a barrel of 1-year-old lambic, a barrel of 2-year-old lambic, a barrel of 3-year-old lambic, and a barrel of 4-year-old lambic, totaling 10 years.
This lambic was matured in small barrels, which added depth and character from the wood.
In this old gueuze, you can taste the power of aging, just like in Villa Servais; the tartness of challenges, sweet successes, and the sparkle of innovation."om cask no. 75, which was built in Antwerp in 1890.
