BlossomGueuze is 2 to 3 year old lambic aged in wood, blended with 12 month old lambic and elderflower. After refermentation in the bottle this gueuze has a golden colour and combines the sour taste of lambic with the natural and fresh aromas of elderflower."

Blond beer brewed with Alvinne's Morpheus yeast that gives a nice soft sour taste. Aged 8 months in oak Bordeaux barrels.

Third in this series, GingerGueuze is based on a blend of 12mth old lambic with 2-3yr old lambic, fermented in oak with fresh ginger. Season 18/19 Assemblage #9. Bottled on 28/11/18. This particular Hommage has macerated a bit more than 6 months.The maceration ratio is 72% raspberries and 28% cherries.

Sour Gruit brewed with a mix of ancient herbs: Yarrow, mugwort, tansy, ground ivy and myrtle

Oud Bruin matured aged for at least a year in oak barrels and then several months with fresh peaches.

Vintage 2021. Fruit Lambiek so it does not foam in order to fully taste the fruit aromas. 1000 kg of whole Mirabelle are fermented over a year with 1500 liters of young lambic. With further maturation in oak barrels.

Season 2019-2020, Assemblage #41. Bottled on 13/02/20. "The one that knows it all, still has to be born” as Armand would say. From time to time, we still get surprised by some of the results after blending lambics. Like this Golden Doesjel. While it was intended to be a Golden Blend, and despite the use of very potent jyoung lambic, the fermentation in the bottle did not continue. And it remained flat. This blend was made with lambics from three barrels, originating from three brews with three different brewers (of which 50% 3 Fonteinen brewed lambic). A nice gentle sipper."

"Aoltbeer is the historic beer of Münster. The beers in this blend matured on average for 14 months in red wine barrels. In this time the beer developed its fruity and wine-like character. Spontaneous fermented, coolshipped and aged in wooden barrels and matureed with local sour cherries. This blends contains 1,2 and 3 year old beer.

"Chuckleberry is a blend of two brews produced in June and September 2019. Made from a turbid wort, using rye malt and aged hops, they started life as potential blending options for our ‘house’ beer, Running Beer. Fermentation and maturation took place in barriques which formerly housed red Bordeaux. We chose three barrels to make a blend that would best fit the fruit: relatively soft and full on the palate to accommodate the fruit's acidity and tannin, complementary aromatics from the red Bordeaux and French oak, and a balancing funk to cut (but not obscure) the fruit. The resulting blend was added to a large quantity of locally grown chuckleberries to referment for five months. The beer conditioned in bottle for a further three months."
