    Season 2019-2020. Assemblage #74. Bottled on 02/09/2020. "For this Schaarbeekse Kriek, we macerated locally grown and manually harvested sour cherries for almost fourteen months in wooden barrels, with both one-year and two-year old lambik. The final fruit intensity is about 350 grams of Schaarbeekse per litre of finished Schaarbeekse Kriek. The average age of this beer upon release will be around two-and-a-half years. 100% 3 Fonteinen."

    Season 2018-2019 Assemblage #108. bottled on 11/09/2019. "This Oude Geuze is a blend of lambikken originating from eight different brews and six different barrels. A portion of the oude lambikken was brewed in February 2016. The weighted average age upon its release was 47 months, including bottle maturation of over 2,5 years."

    Season 2022-2023 Assemblage #38. Bottled on 31/01/2023. "For this first ever fully organic grape lambik, we macerated Grüner Veltliner grapes on one- and two-year old lambik. The grapes were sourced from Christoph Hoch, a Demeter-certified wine maker from Hollenburg an der Donau, Austria. Total maceration time was almost five months and the weighted average age of this blend was more than 19 months upon bottling. The final fruit intensity is 406 grams of whole grapes per litre of finished Druif. All cereals we used in brewing the seven different lambikken, were sourced with local Pajot farmers."

    "Standing beer is brewed in the summer and fermented with ale yeast in our coolship at ambient temperatures. The wort is made from barley, spelt, rye and European hops. Maturation takes place in large oak casks with wild yeast and bacteria, until the winter. Finally the beer is dry-hopped with whole-leaf hops and bottle conditioned for several months before release."

    "L'édition 2023 de cette bière Lambic naturelle et pétillante, née de la rencontre de deux glorieuses traditions, la Méthode Traditionnelle pour les vins pétillants et la fermentation spontanée pour les bières Lambic. Le lambic d'Oud Beersel est tiré en bouteille avec l'ajout de la liqueur de tirage, qui se compose de levure de vin mousseux et de sucre pour la fermentation secondaire. La bière vieillit ensuite pendant quatorze mois en bouteille avant d'être finie selon la "méthode traditionnelle". Ce processus permet le développement de gaz carbonique fin qui est piégé dans la bouteille et qui rend le Lambic pétillant. L'application du remuage et du dégorgement permet d'éliminer les levures présentes dans la bouteille. Pas de sucres ajoutés par addition d'une liqueur d'expédition. Le resultat est une bière lambic BRUT et pétillante avec une palette de saveurs impressionnante."

    Season 2023-2024 Assemblage #54. Bottled on 18/06/2024. "For this classic version of the Zenne Y Frontera Blend 54, we blended not less than fice different barrels of sherry aged lambik. The barrels are a mix of very old Oloroso and Amontillado barrels from two small family bodegas. Bodega Joséfa Perez is located in the hearth of Jerez de la Frontera and Gutiérrez Colosia is locted at El Puerto De Santa Maria. We aged more-than-three-year-old lambikken for an additional year on these sherry casks. consequently, the weighted average age of this blend is over 50 months."
