Blond beer brewed with Alvinne's Morpheus yeast that gives a nice soft sour taste. Aged 8 months in oak Bordeaux barrels.

Spontaneous fermented, coolshipped and aged in wooden barrels and matureed with Barbera grapes.

"Fruit de nos expérimentations farfelues, le brassin de cette Double Black Sour remonte déjà à février 2021. Après un passage d'un an et demi en barriques de Cognac, elle a refermenté deux mois sur une concentration de 200g par litre de cerises griottes. Le résultat n'est pas sans rappeler la célèbre forêt noire et le voltage monte gentiment à
8%."

"Pour cette bière nous avons laissé une belle quantité de raisins frais fermenté plusieurs semaines avec notre Berliner Weisse. Le résultat est surprenant, d'une couleur rouge rubis éclatant, le nez est vineux, fruité. "Crianza belongs to the family of Flemish Red-Brown ales. Born out of a mixed fermentation, she spent more than a year in oak barrels. Her body has copper reflections, and her aspect is limpid. Her foam is beige and creamy, with a nice hold. She smells like Northern cherries, with a woody and winey accent, and a slightly animal touch given by the Brettanomyces yeast. In the mouth, these flavors are completed by stewed apples, notes of Agen plums, blackberries, spices (cinnamon, cloves, licorice), and a very lightly caramelized touch of malt and biscuit. Her slightly sour character makes her surprisingly refreshing."
