"Farmhouse base beer aged for six months in neutral oak barrels. The beer was then moved to one of our custom built "Punch Down" barrels and added two pounds per gallon of figs. The fruit was punched down twice a day for two weeks then left to referment for two months."

Assemblage #81. bottled on 03/10/18. Blend made with 100% lambic brewed by 3 Fonteinen from 8 different barrels and originating from 9 brews. This blend contains 47% matured and old lambics from 6 different brews.

"Need a worry free alcohol free beer? We got it for you. A lightly hopped and pleasantly refreshing pale ale, fermented with a brewers yeast which cant ferment Maltose. Tasting like a low abv beer due to this process you can enjoy the beer wihtout the effect."

Fermented drink lmde with "Cormes" from very old Sorbus Domestica trees.

Semi-sweet mead aged on tahitian vanilla beans and aged in new american oak.

Wheat Saison brewed with spices and Colorado hops, collab with Cellar West Artisan Ales. BB is end 2022

Cider made with different varieties (at least 20) of old trees growing in a "stony" soil. Lots of potential to age in a cellar.

"In Gooik's fields ripen the most beautiful apples, those appels ferment together with lambic to this Pajotse cider. This variety of apples gives an intense extra flavor to the lambic that is fermented on wooden barrels. 45kg on 100 liters young lambic."

Season 2018-2019 Assemblage #12. bottled on 10/12/18. Blend made from 6 different barrels originating from 9 different brews. Almost half of the blend consists of 3F Lambic.

Season 18/19 Assemblage #13. bottled on 11/12/18. Blend made with 100% lambic brewed by 3 Fonteinen from 6 different barrels originating from 12 different brews. 45% consists of semi-old and old lambic from 6 deiffernt brews.

Season 18/19 Assemblage #9. Bottled on 28/11/18. This particular Hommage has macerated a bit more than 6 months.The maceration ratio is 72% raspberries and 28% cherries.

Season 18/19 Assemblage #42. Bottled on 25/02/19. This particular Hommage has macerated 4.5 months with the fruits The one-year and two-year lambics come from 6 different barrels and from 7 different brews. Final fruit intensity is of 350 grams of fruit (76% raspberries and 24% cherries) per liter of Hommage.

Sour pomelo, bergamot, mandarin

Dark Sour Ale brewed with oak smoked malts. After boiling the beer was allowed to cool down with the night air in a coolship. After one year in barrels this beer came with notes of bitter chocolate, wood and blood orange.

Season 2018-2019 Assemblage #51. bottled on 07/03/19. Blend made from 5 different barrels originating from 5 different brews. This blend consists of 45% young lambic and 55% 3 year-old lambic. Part of this blend was bottled in Magnums.

Season 18/19. Assemblage #49.Magnum bottled on 04/03/19. Blend made with 100% lambic brewed by 3 Fonteinen from 5 different barrels originating from 10 different brews. The oldest lambic was brewed in early 2016. This BLend only contains young and three-year old lambic.

Season 18/19 Assemblage #57. bottled on 21/12/18. This Hommage has macerated for 4.5 months with the organic raspberries and sour cherries. The lambics used come from 6 different barrels and originate from 5 different brews.

Season 18/19, Assemblage #66. bottled on 18/04/19. This specific Oude Kriek has macerated for 6 months with the cherries oak foeders. The lambics in this blend come from 7 different barrels and originating from 7 different brews from 3 Fonteinen. The final fruit intensity is of 356 grams of sour cherries per liter of Oude Kriek.

Vintage hand crafted apple sparkling wine from fresh farm pressed traditional Estonian juice apples. Wild yeast used for primary fermentation. Bottle fermented for at least six months according to traditional method.

"Made in deep winter by freezing the apple juice before fermentation starts. This concentrates the rich, intense flavours and reflects the sweet and tart character of late ripening Estonian apple varieties." Fermented with wild yeats and matured in oak barrels.

Hand crafted medium sweet cider flavoured with in-house brewed mix of natural cinnamon, cardamom and nutmeg. Bottle fermented for at least six months according to traditional method, then disgorged and flavoured.

Natural sparkling rhubarb wine.

Medium Dry Cider fermented with wild yeasts and matured with fresh black currants.
