    "La Brett Porter est inspirée des anciens Porters londoniens, bières superstars des années 1800, qui étaient conservés dans d'immenses foudres en bois dans lesquels se développaient des levures Brettanomyces. Elle n'a pas été barriquée, mais co-fermentée avec notre Brettanomyces maison, et brassée à partir de magnifiques malts spéciaux anglais. Sa robe est noire avec une teinte ruby. Sa mousse, beige foncé, est fine et persistante. Les Brettanomyces sont bien présentes au nez, lui conférant un caractère vineux avec des cerises bien mûres comme un vieux kirsh, et un peu de cuir. Une touche torréfiée et légèrement fumée complètent le tableau. Ces arômes se retrouvent en bouche, additionnés de notes de moka, de poudre de cacao et de pruneaux "

    Season 2021-2022. Assemblage #89. Bottled on 30/06/2022. "For this Cuvée Miel, we blended three different old lambikken, all brewed while adding honey-from-our-own-hives onto the coolship. We let them mature extensively on their dedicated barrels, before blending them with some young lambik and a small portion of a honeycomb macerated lambik. We used quite some two- and three-year old honey lambikken, pushing the weighted average age of the whole blend to more than 30 months on the moment of bottling."

    Season 2021-2022 Assemblage #75. Bottled on 24/05/2022 "This particular blend of Oude Geuze consists of nine different brews originating from nine different barrels. More than 80% of the blend consists of lambikken brewed by ourselves. More than 60% of the blend consist of lambikken of two, three and four years old, bringing the weighted average age to more than 28 months. Half of the combined grain bill was composed of cereals that we sourced from our Cereal Collective in and around Pajottenland."

    Season 2021-2022 Assemblage #94. Bottled on 26/07/2022 "For this Oude Geuze, we selected lambikken from four ex-sherry barrels - three Oloroso and one Palo Cortado - with highly peated characteristics, and blanded these with a more mellow lambic to balance it all out. Consequently, we used lambikken from five different brews and six different barrels, spread over young, quite a lot of three-year old and four-year old lambikken. This way, the weighted average age is more than 35 months."

"For this Oude Geuze, we blended lambikken originating from three different barrels and seven different brews, of which the oldest was brewed in October 2019. This is a 50/50 blend of one-year and three-year old lambik. Of the 3 Fonteinen lambikken used (75%), almost 80% was brewed with cereals coming from our own Cereal Collective."

    Season 2021-2022. Assemblage n°55. Bottled on 25/03/2022. "For this Oude Geuze Golden Blend we blended lambikken that originate from three different barrels and four different brews, with three different brewers. This Golden Blend is particular in that sense that we used two- and five-year old lambikken only, and finished it with some freshly brewed lambik wort for the push in the bottle. Since a good 60% is two-year old lambik and almost 40% is five years old, the weighted average age of this bottle, upon bottling, is more than 31 months. Add to that at least a year of bottle conditioning, and it will have reached a weighted age of more than 43 months. Compared to blend 54, this blend roughly has an inverted proportion of two- and five-year-old lambik."

    Season 2021-2022. Assemblage n°57. Bottled on 31/03/2022. "For this Oude Geuze Platinum Blend, we blended lambikken originating from four different barrels and nine different brews. We used one- two- and four-year old lambikken, in a 27/30/43 proportion and finished the blend with some freshly brewed wort. This way, the weighted average age of this bottle, upon bottling, clocks at to more than 30 months. Add to that at least a full year of bottle conditioning, and it will have reached a weighted age of more than 42 months. Almost 40% of the blend consists of lambikken brewed with grains form our own Cereal Collective."
