De Dolle Dulle Teve
€4.05"De Dulle Teve is brewed in the tradition of a Belgian Triple. Its high density stems from large amounts of pale malt increased with pale candi sugar in the brew kettle. Unfiltered, unpasteurized, bottle-conditioned. De Dulle Teve keeps two to three years without major changes in taste. Further maturing, up to 10 years, will cause it to darken a little and lose some of its bitterness. The bittering of about 30 IBU is due to Goldings hops in the brew kettle."

De Dolle Stille Nacht 2023
€6.95"Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."

de Garde Ivy
€28.53"Ivy is a beer made with 100% regionally grown pale malted barley. In the kettle, it sees both three to four-year aged whole leaf hops, as well as pellet hops from the most recent harvest. Both are grown here in Oregon. It is the most simple of our recipes, yet one of the most complex in expression. One malt, one hop, our wonderful local water, and time. Ivy spends two years in neutral wine puncheons. We choose from these barrels a blend that is funky, but not too funky. Tart, but not too sour. Complex, but still hedonistic. Really, a blend that we are happy to make, to blend, and ultimately to share, in celebration of our new home."

De la Senne / Canediguerra...
€3.11"A beer we brewed with our friends from Canediguerra (IT). It is a blond, bottom-fermented beer, generously dry-hopped with New Zealand hops. The aromas offer a perfect balance of florals and exotic fruit. In the taste, we find passion fruit, kumquat, and green papaya, blended with an enchanting touch of exotic flowers. A light sulfur character, typical of bottom-fermentation yeasts, gives the beer its distinct personality. Canedisenne has a mild bitterness, balanced by a fruity sweetness in the finish."

De la Senne / Cantillon...
€3.41"This beer—created for the 25th birthday of Cantillon’s Quintessence—uses an ancient and typically Belgian technique called ‘coupage’: the blend of a sour beer with a young ale. The sour beer we used is 2-year-old Lambic from Cantillon. The result is a 6.2% abv amber beer, with an appealing tartness and a deep, complex vinous character."

De la Senne 100Pap
€3.07"The 100PAP is a 6% alcohol Pale Ale type beer. It has a magnificent amber-copper color. On the nose, a delicious esters fermentation (banana, pear) flourishes as well as an exotic and spicy touch. On the palate, lovely malty aromas of caramel and crème brûlée bring its roundness, and are served with fruity (banana, apricot and lemon) and spicy notes where juniper and its finely minty side are mixed with coriander, and white pepper, all balanced with a slight bitterness. A generous beer, just like its partners !"

De la Senne Brett Saison
€2.97Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons. bbd 18/11/2024

De la Senne Bruxellensis
€3.03"4 months bottle refermented with 100% Brussels Brettanomyces yeast.
Amber colored with copper reflections, very fruity (pineapple and red fruits), sustained by hop flavors and complex notes of old leather. In spite of its 6,5%, its dry and bitter finish makes it a surprising thirst-quencher." -
De la Senne Bruxellensis...
€3.47"You know our Bruxellensis, a complex beer brewed with an indigenous Brussels yeast that we found in the "wild" nature of Saint-Gilles: the famous Brettanomyces Bruxellensis. We have made a version of this beer that has been able to mature for several months in old red wine barrels: the BRUXELLENSIS RESERVA. The result is a flavorful festival of red and black berries: wild strawberries, candied cherries, blackberries and blueberries. It has some woody notes of course, and the Brett adds not only fruity notes, but also accents of old leather. The aftertaste is dry with a delicious bitterness. A wine-like and complex beer that is at the same time very refreshing and easy to drink."

De la Senne Petit Boulba
€2.57"The story behind the name is amusing: Brewing in our very first brewery in Sint-Pieters-Leeuw was entirely manual and really exhausting. For lunch, we dreamed of a light and flavourful table beer to quench our thirst... One day, Bernard had the idea to mix a Taras Boulba with an equal amount of sparkling water to make a "small beer". A super refreshing beer that wouldn’t prevent us from getting back to work in full shape! And we decided to call it the "Petit Boulba"...We reused the name as a reminder of the early days, but of course we made the beer according to a specific recipe. Petit Boulba is a blond beer with only 2.8% alcohol, with a blonde and cloudy appearance due to the use of wheat and oats. Its aroma is very floral, with notes of fresh cereals. On the palate, these aromas develop further and blend with notes of white fruits and fine herbal touches. Petit Boulba is slightly bitter and has a very dry and super refreshing finish. As spring has been waiting so long to arrive, I guess we’ll just skip it entirely and go straight into summer!"
