€ 15,41Season 2021-2022. Assemblage n°57. Bottled on 31/03/2022. "For this Oude Geuze Platinum Blend, we blended lambikken originating from four different barrels and nine different brews. We used one- two- and four-year old lambikken, in a 27/30/43 proportion and finished the blend with some freshly brewed wort. This way, the weighted average age of this bottle, upon bottling, clocks at to more than 30 months. Add to that at least a full year of bottle conditioning, and it will have reached a weighted age of more than 42 months. Almost 40% of the blend consists of lambikken brewed with grains form our own Cereal Collective."

We used both two- and three-year old lambikken for both macerating and blending, originating from four different barrels and ten different brews. The weighted average age is almost 26 months, and the final fruit intensity clocks in at 319 grams of sour cherries per litre of Kriek."

€ 31,17Season 2022-2023 Assemblage #38. Bottled on 31/01/2023. "For this first ever fully organic grape lambik, we macerated Grüner Veltliner grapes on one- and two-year old lambik. The grapes were sourced from Christoph Hoch, a Demeter-certified wine maker from Hollenburg an der Donau, Austria. Total maceration time was almost five months and the weighted average age of this blend was more than 19 months upon bottling. The final fruit intensity is 406 grams of whole grapes per litre of finished Druif. All cereals we used in brewing the seven different lambikken, were sourced with local Pajot farmers."

€ 31,55Season 2022-2023 Assemblage #42. Bottled on 09/02/2023. bottle count: 1315. "For this Druif, we macerated Sylvaner grapes from Harth+Harth, for more than four months on an oak barrel. We used two- and three-year lambikken only, rendering the weighted average age of this blend to more than 26 months. The final fruit intensity clocks at more than 584 grams of grapes per litre. Almost 80% of the cereals for the five brews were sourced with our local farmers. A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Harth+Harth is a family-owned Demeter-certified organic winery from Saulheim in the German wine region of Rheinhessen.!"

"For this specific Oude Geuze Golden Blend, we used lambikken from three different barrels and five different brews, and two different brewers. More than one third of the lambikken used is more than 48 months old, rendering the weighted average of the blend to more than 26 months. The oldest lambik was a 3 Fonteinen lambik brewed in the first days of 2018. Of the 3 Fonteinen brewed lambikken, almost half were brewed with Pajottenland sourced grains from our own cereal circle. And of the hops used in our brews, one third is of Belgian origin, and the average age was more than 15 years."

We used both one-, two-, three- and four year old lambikken, clocking the weighted average age of the blend upon bottling at more than two years, or 24 months. The oldes lambik was brewed in the first days of 2018. More than 40% of the combined grain bill was sourced in Pajottenland, with our own cereal circle. Also more than 40% of the combined hops were sourced in Belgium, with an average of 14 years of age."

€ 28,71: 4Season 2020-2021 Assemblage #50. Bottled on 31/05/2021. "For this Druif, we macerated Limburg grown Souvignier Gris grapes on one- and quite a lot of our own two-year old lambik. The maceration took more than seven months. The lambikken in this bottle originate from two different barrels and three different brews. The weighted average age of this blend upon bottling is eighteen months. A small portion of the lambik was brewed with Belgian grown cereals. The final fruit intensity is 353 grams of fruit per litre of Druif."

€ 19,97"We grow these raspberries ourselves and put them whole in a steel tank with lambik of at least one year old for about four to six months. A bit of younger lambik is added before bottling to referment in the bottle. We strive to have 350 grammes of raspberries per liter of beer."

Oud Beersel Oude Gueuze...
€ 10,37"In the past Port wine was shipped to the harbours of Bruges and Antwerp on wooden barrels of 650 liters, called ‘pipes’ or ‘pijpen’ in Dutch. Some of these barrels were purchased by Lambic breweries and have contained Lambic for many generations. Some barrels have been circulating in other, some defunct, Lambic breweries before finding their final place in the barrel cellars of Oud Beersel. We have blended the finest Lambics of on average 20 months old matured on these ‘old pipes’ of between 60 and 120 years old, to create an Oude Geuze with the characteristics of these old barrels."

Tilquin Oude Gueuze 2020-2021
€ 48,97Magnum. "The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose."

Den Herberg Oude Geuze...
€ 6,97"In 2024, 150 years will have passed since the birth of Louis Thevenet; a famous painter from Halle. To celebrate this occasion, Brewery 'Den Herberg', in collaboration with 'den AST' and 'Villa Servais', developed a 'Geuze Thevenet.' It is a unique blend of eleven different barrels of lambic, aged in old (red and white) wine barrels made out of French and American oak.
Kloris Devillé from Den Herberg describes the geuze as follows: "This 'Oude Geuze' has a lively palette of flavors, much like one might find in a masterful painting. The subtly woven minerality forms a canvas on which the depth of the composition is built, while the complexity of the geuze, thanks to the former red and white wine barrels, unveils a rich and varied palette of aromas and flavors, almost like masterful brushstrokes.". Six different labels were designed, each featuring a different painting by Thevenet from the collection of 'den AST'. This allows beer enthusiasts to simultaneously enjoy works such as 'Hôtel de Bruxelles', '’t Wit Paard', 'De Weg-Om', and 'Onze-Lieve-Vrouw van Halle onder stolp'. It's a little preview of the grand Thevenet exhibition, which will be on display on March 23 (2024), at 'den AST' and 'Villa Servais'.." Percentage of 3 YO old lambic is higher than in the Gueuze Devillé. -

Oud Beersel Rose Flowers...
€ 19,87"For the production of the Rose Flower Lambiek - Sparkling Infused, we added rose petals to a soft, foeder-aged Lambic and left them to macerate for about 4 weeks. After that, we bottled the beer so a secondary fermentation could take place. The result is a slightly pink Lambic, with bright floral notes and a sparkling mouthfeel. "
