One component consists of one-year-old lambic macerated on Regent grape skins for more than three months before further barrel ageing. Another is fresh Gorsem cherry lambic that spent six months on the fruit. The final component is a wine produced by co-fermenting Regent and Müller-Thurgau grapes, matured in glass demijohns for one year without any additions.
Together these elements create a layered blend where grape, cherry and wine character intertwine." -

DOK De Witte Van Zevergem
€ 2,98"3.9% Weizen (Champagne Barbu Tarwe; Magnum & Hallertau Mittelfrüh) - Witbier gebrouwen met een oude tarweras genaamd Champagne Barbu. Binnenkort start onze samenwerking met bioboerderij Welden. Zij willen verschillende oude graanvariëteiten voor ons aanplanten om dan te gebruiken in ons bieren. Al deze granen zijn ‘bijna’ vergeten rassen die omwille van de lagere rendementen dan de commerciële worden verdrongen uit de conventionele landbouw. Uiteraard hebben deze graansoorten andere smaken en aroma’s dan we gewend van deze soorten. Dit bier is dus een voorproefje van meerdere bieren die hun focus hebben op de gebruikte graansoorten."

DOK / Uncharted Ik Drink...
€ 3,79"6% New England IPA (Dolcita, Anchovy & Nectaron) - Collab met twee Belgische brouwerijen Uncharted en BRSTWRD. Het werd een NEIPA van 6% met Anchovy (waarschijnlijk een van de eerste keren dat deze hop werd gebruikt in België), Dolcita en Nectaron. Veel lekkere hopjes dus. Klein detail: Dimitri en mezelf hebben Matt Storms leren kennen in Washington, buiten een gekende brouwer in Seattle is hij ook een van de ontwikkelaars van de Anchovy. De naam kwam tot stand toen Tom (Uncharted) en Janos aan het klagen waren dat ze bier soms zo beu waren, daarna zijn we wijn beginnen drinken voor de rest van de tap takeover. Uiteraard zijn we bier niet beu, maar het moment was te mooi om te laten liggen."
