#2023-007 – Barrel aged vlierbloesem saison blend + vlierbes lambiek. Bottled May 2023

"Our take on a classic style of beer. A blend of fresh and aged Flemish brown Ale. 60% of the blend was aged for over 1,5 years in a red wine foudre and after that the beer was aged for another year in bordeaux wine barriques. We also blended in a few bourbon barrel aged brown ale to give the blend a hint of American oak."

Collaboration with Granizo, Vermouth barrel aged flemish sour ale.

"When the hop farmers start harvesting, we start brewing our Hop Harvest. The fresh, undried hop flowers are picked in the morning, and on the same day they are used in the Hop Harvest-brew, straight from the field. Because we use 'wet hops', the beer has a fresh, floral, and pleasantly bitter taste. By changing the recipe every year, the outcome is always a surprise. Drink this beer young if you can, that's when the wet hop shows of their floral character the most."

"Gose with Pinot Noir pommace, lemon balm and fig leaves. This goes has been infused with grapes and herbs from the vineyard of Philip Lardot (Mosel), a real snapshot of his terroir."

"It all started with our friend Laurent from Domaine De Krayenberg, a vineyard located in Beersel. We took 300kg of Muscadis grape pomace and blended to a mixed fermentation Saison that aged 12 months in Pinot Noir barrels. An elegant and complex beer with a light acidity and a balance of rich flavors and earthy tannins."

"8 months red wine barrel aged natural cherry wine"

bottling date: 14/06/2023 · bottle count: 752. "For this lambic-braggot (= a beer-mead hybrid) 'Could Heaven Ever Be Like This', cherries and cassis mead from De Mederie were blended with young and three-year-old lambic from 3 Fonteinen in a ratio of around 50%-50%. For the name, we found inspiration in the song 'Could Heaven Ever Be Like This' by jazz drummer Idris Muhammad; a song that represents the clash of all the subtleties, funkiness, nuances and liveliness of both worlds, intertwined in this bottle. The fitting label design came from @Letterlik."

Natural wine. Variety: Trepat. Alcoholic fermentation with indigenous yeast present on the grape skins, bottled without filtering, clarifying or stabilizing. No additives, just fermented grapes.

Saison brewed with local Emmer wheat, fermented with Kveik & Brett and then aged for 12 months in Burgundy red wine barrels.

Rye Saison fermented with Kveik and Brett. Aged for 11 mpnths in Burgundy red wine barrels.

Blend of 2 Saison fermented with Brett and aged 8 months in Burgundy red wine barrels and 10 months red wine barrels from Languedoc.

Whole blackberries from their own farm aged for four months in lambic that was at least one year old.

Hoppy Dark Saison. BBD 08/2024

"Aged 17 months in barrel. Young cider from Pajotse standard orchards. 6 months aged in barrel. Old cider brings structure and tannin. Young cider brings aroma and acidity. Fermented, aged & bottled on the farm."
