"The 100PAP is a 6% alcohol Pale Ale type beer. It has a magnificent amber-copper color. On the nose, a delicious esters fermentation (banana, pear) flourishes as well as an exotic and spicy touch. On the palate, lovely malty aromas of caramel and crème brûlée bring its roundness, and are served with fruity (banana, apricot and lemon) and spicy notes where juniper and its finely minty side are mixed with coriander, and white pepper, all balanced with a slight bitterness. A generous beer, just like its partners !"

Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons. bbd 18/11/2024

"X Anniversary 4/10 Imperial Baltic Porter - fourth in a series of anniversary beers brewed in collaboration with friends from Hidden Springs. This is a mutual collaboration – a similar base beer was brewed, then supplemented in the final stages to recreate popular desserts from each region. In Wroclaw (PL), Guava Pastelitos, a very popular snack in Tampa (FL, USA), was replicated. Meanwhile, Hidden Springs tackled plum-streusel yeast cake, a classic dessert in Poland. Traditional long aging, preceded by extended fermentation, ensures this beer spends over two months in the tank. Dark notes are present but do not dominate as they might in an Imperial Stout. The selected ingredients offer a light sweetness and a distinctly tropical character. All of this is complemented by dessert-like aroma."

Porter inspired by the Porter from Anchor Brewing using the "steam beer" method.

In the nose, notes of earthy, pine and resin are perceived along with shades that evoke citrus skin. In the mouth it presents a cheesy carbonation with bitter flavors, a spicy point and a certain presence of malt that reminds you of bark of bread."

"This beer—created for the 25th birthday of Cantillon’s Quintessence—uses an ancient and typically Belgian technique called ‘coupage’: the blend of a sour beer with a young ale. The sour beer we used is 2-year-old Lambic from Cantillon. The result is a 6.2% abv amber beer, with an appealing tartness and a deep, complex vinous character."
