"For this Schaarbeekse Kriek, we macerated locally grown and manually harvested sour cherries for almost fourteen months in wooden barrels, with both one-year and two-year old lambik. The final fruit intensity is about 350 grams of Schaarbeekse per litre of finished Schaarbeekse Kriek. The average age of this beer upon release will be around two-and-a-half years. 100% 3 Fonteinen."

The macerated apple juice is naturally fermented and bottled at Oud Beersel without pasteurisation or the addition of sulphites. This results in a wild dry cider, with almost no residual sugar."

€ 31,17Season 2022-2023 Assemblage #38. Bottled on 31/01/2023. "For this first ever fully organic grape lambik, we macerated Grüner Veltliner grapes on one- and two-year old lambik. The grapes were sourced from Christoph Hoch, a Demeter-certified wine maker from Hollenburg an der Donau, Austria. Total maceration time was almost five months and the weighted average age of this blend was more than 19 months upon bottling. The final fruit intensity is 406 grams of whole grapes per litre of finished Druif. All cereals we used in brewing the seven different lambikken, were sourced with local Pajot farmers."

Mills Standing Beer
€ 11,52: 4"Standing beer is brewed in the summer and fermented with ale yeast in our coolship at ambient temperatures. The wort is made from barley, spelt, rye and European hops. Maturation takes place in large oak casks with wild yeast and bacteria, until the winter. Finally the beer is dry-hopped with whole-leaf hops and bottle conditioned for several months before release."

€ 25,93"New edition of this natural, sparkling Lambic beer, combining Méthode Traditionnelle for sparkling wines and spontaneous fermentation for Lambic beers. Oud Beersel’s Lambic is bottled with ‘liqueur de tirage’ (sparkling wine yeast and sugar) for secondary fermentation, maturing for at least nine months. This process creates fine carbon dioxide gas, making the Lambic sparkling. ‘Remuage’ and ‘dégorgement’ remove the yeasts, with no sweetening added. The result is a BRUT sparkling Lambic beer with an overwhelming flavor profile."

€ 10,79"X Anniversary 10/10 Mixed Fermentation Honey Saison - 10th in a series of anniversary beers. Wild beer, fermented with a blend of wild yeast and bacteria from Stu Mostów Brewery. The idea for this beer was born during a meeting with B. Nektar Meadery, where the most interesting barrels were selected to create a unique blend of wild beers. A significant amount of Polish local multifloral honey from the Zloty Miód apiary was then added. As the wild yeast fermented the honey, the beer developed a dry profile while retaining a pleasant sweet floral honey aroma. Before bottling, an extra portion of honey was added, enabling natural carbonation through bottle refermentation. "

"Voor deze klassieke versie van de Zenne Y Frontera Blend 54 hebben we niet minder dan vijf verschillende vaten sherry gerijpte lambiek gemengd. De vaten zijn een mix van zeer oude Oloroso- en amontilladovaten van twee kleine familiale Bodegas. Bodega Josefa Perez is gelegen in het hart van Jerez de la Frontera en Gutierrez Colosia bevindt zich in El Puerto De Santa Maria. We hebben lambikken van meer dan 3 jaar oud nog een extra jaar laten verder rijpen op deze sherryvaten. Hierdoor is de gewogen gemiddelde leeftijd van deze blend meer dan 50 maanden."
