"Brewing is science, expertise, intuition, but sometimes also archival work. Our passion for tradition doesn't stop with the beer itself: every now and then we delve into history, searching for forgotten knowledge. We were recently reminded of a remarkable document from the State Archives of Brussels: an ordinance from 1559, drawn up by Remy Le Mercier, city treasurer of Halle. A piece that will undoubtedly cause a stir among connoisseurs.
The text specifies the correct grain ratios for local beers from that time. Today, the document is considered the oldest known recipe linked to lambic. What immediately stands out? The mention of oats. A grain rarely found in lambic today, but still legally permitted alongside 60% barley malt and 30% wheat. That beer recipes evolve over time is beyond dispute. Technology changes, and legislation also has an impact. And yet: Le Mercier's grain ratio is still remarkably close to what is the standard today.
Thanks to Remy Le Mercier, we know that lambic has been brewed since at least the 16th century. So we used his ordinance as a guide for an exclusive Oude Geuze. On February 22, 2024, we filled no fewer than 5,400 75cl bottles. With this Oude Geuze Remy Le Mercier, we prove that oats can indeed play a role in the production of Oude Geuze. The result: A soft, full-bodied Oude Geuze with a firm head and a clearly recognizable nutty oat flavor."

"To create the Roasted Oolong Tea Sparkling Infused Lambic, one-year-old Lambic was infused with roasted Oolong tea for about four weeks. This tea, especially popular in Asia, is slightly oxidised and was then roasted in the traditional way. This results in a rich flavour, with a certain spiciness and some toasted notes. Thanks to the re-fermentation in the bottle, these flavours blend into one harmonious whole."

"Our most mango-packed beer yet! We started with a base fermented for four months in tank using our most tropical-forward yeast strains, building layers of overripe tropical fruit, juicy fruit gummies, and a subtle touch of Brettanomyces funk. From there, we refermented it on an enormous 300 g/L of Indian Alphonso mango, amplifying the lush, fruit-saturated character to the max."

"A brooding heavyweight of a beer. Inspired by an 18th century recipe for Courage Russian Imperial Stout.This beer features large quantities of charred and roasted malts, balanced by layers of dark crystal malts and a touch of smoke. Fermented with classic workhouse British ale yeast."

"Inspired by Flanders Reds of old, Goat Witch is our blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels for upwards of one year. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.

This blended base was refermented on 200g/l locally grown Scottish tayberries from the 2025 harvest. Tayberries are a cross between a raspberry and blackberry, producing a complex combination greater than the sum of its parts."

"Brewed in collaboration with our friends at Turning Point Brew Co, this heavyweight Imperial Stout was crafted with nine distinct malts and fermented with bold Norwegian Kveik yeast. Infused with demerara and muscovado sugars, it spent a full year maturing in French brandy barrels. The result is a dark colossus laden with flavours of chocolate, toffee, and espresso, and layered with decadent notes of tonka bean, red wine, and oak."

"When the hop farmers start harvesting, we start brewing our Hop Harvest. The fresh, undried hop flowers are picked in the morning, and on the same day they are used in the Hop Harvest-brew, straight from the field. Because we use 'wet hops', the beer has a fresh, floral, and pleasantly bitter taste. By changing the recipe every year, the outcome is always a surprise. Drink this beer young if you can, that's when the wet hop shows of their floral character the most."

Côté houblons : du Strata (leur variété star) et son cousin français, le Barbe Rouge sont mis en avant, en compagnie de l'Ekuanot, l'un des favoris de Whiplash, dont le côté citronné se marie bien avec le Nelson Sauvin."
