    "An evolution of the very first Wadesda, a blend of Jambe-de-Bois and Cantillon lambic, making the Wadesda #9 a Tripel Saison: a stronger version of the original Saisons. She is amber in colour and has those typical characteristics of Lambic: woody with a strong funky nose of Brettanomyces, with quince and fallen apples. This is followed by white flowers, old kirsch and persimmon, and even a hint of curry leaves. A very winey character, as it should be! All of this blends perfectly with the classic aromas of tripels, like pears and bananas. Her strong alcohol percentage enhances her vinous qualities and gives a certain roundness to a finale that is quite dry and almost mineral. Intoxicating and complex, but refreshing and drinkable!"

    Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests.
    Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons.

    Saison blended with lambic from Cantillon and aged in barrels. "An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character. The finish is bitter but perfectly in balance." Second blend bottled in March 2023.

    "The Brett Porter is inspired by the old London Porters, superstar beers of the 1800s, which were kept in huge wooden casks in which Brettanomyces yeasts grew. It was not barreled, but co-fermented with our house Brettanomyces, and brewed from magnificent English specialty malts. Pours black with a ruby tint. Its foam, dark beige, is fine and persistent. Brettanomyces are present on the nose, giving it a vinous character with very ripe cherries like an old kirsh, and a little leather. A roasted and slightly smoky touch completes the picture. These aromas are found in the mouth, with added notes of mocha, cocoa powder and prunes."

    "A collab we did with our friends from Dieu du Ciel brewery in Montreal, Quebec. Brussels and Quebec share plenty of things, including our fantastic array of swear words. 'Crisse!' is one of the iconic curses from La Belle Province, and we thought it deserved its own beer... Our friends insisted on calling it a 'Triple du Nouveau Monde.' Indeed, it's a fairly robust blonde (7.5%), packed with a good dose of spelt and fermented with our in-house yeast for that Belgian twist. However, it's heavily hopped with North American hops (from the USA to be precise), carefully chosen by J-F, who is the master brewer of DDC. The result is a super aromatic beer, bursting with exotic fruits like pink grapefruit, passion fruit, starfruit, prickly pear, and yuzu. This fruity explosion is complemented by complex floral notes and backed by a slightly resinous touch. Its bitterness is subtle but present (we make beer, not fruit juice!), balanced by a nice, soft body, with a low CO2 saturation to up its drinkability. A beer that brings a bit of summer to the heart of this gloomy winter and that will warm you up pleasantly!"

    "ZENNEGASH is a collab with our friends—and excellent brewers—of Allagash Brewing Company from Portland, Maine in the USA. Little side note: the first ever collab we did was with them in 2011: the Very Spéciale Belge. We didn’t have to look far to find a name for the beer. We simply combined the two rivers we both owe our names to: the Allagash river, and our good old Zenne! This time we brewed a wheat beer (the specialty of Allagash!), dry hopped with both American and European hops. We made two versions: one bottled version, refermented with Brett-yeast, and one clean version in kegs."
