    Three varieties of Pajottenland organic quinces macerated for 5 months in oak barrels. After mixing the 3 barrels, a part of the quince lambic was blended with 40% cider. This spontaneous cider is fermented and matured in wood. Obtained from organic apples from Pajottenland soil. Varieties Kermerrien, Marsengien and fréquin rouge. Normandy varieties.
