Season 2018-2019 Assemblage #113. bottled on 02/10/19. "This specific Oude Geuze has been blended with lambikken originating from four different barrels and five different brews from three different brewers. The oldest lambik was brewed at the beginning of March 2017, and we aged this bottle for over 20 months in our own cellars before releasing it."

"Sour Morello Cherries from Kent were delivered to us fresh and added to a nine month old foudre aged saison. Further ageing and refermentation has drawn out a beautiful colour and complexity of cherry fruit, almond and oak flavours."

"This beer started life in March 2019, brewed with our long term friends at Thornbridge. A portion was released by them as Vicious Circle in 2020. The remainder was sent to us, aged further in our barrels, then blended with a mixed fermentation saison. A true representation of both breweries’ barrel ageing projects, we have come full circle."

A new recipe of Mano Negra aged for 3 months in Peated Whisky barrels from Kilchoman that previously held Oloroso

Season 2020-2021 Assemblage n°18 bottled on 25/01/21. "For this small-batch Frambozenlambik we macerated raspberries from Ferme Framboos for three months on one- and two-year old lambik from two different barrels and two different brews. We bottled the frambozenlambik as such, straight from maceration to bottle; no lambik was added. Don’t panic if this beer is a bit on the flat side. It is intended to be this way. The weighted average age of this frambozenlambik upon bottling was more than twenty months, and final fruit intensity is 350 grams of raspberries per litre of Frambozenlambik."

#015 - "In september 2020, we went to the Champagne region where we picked up freshly pressed pomace of the 7 champagne grape varieties (Chardonnay, Pinot Noir, Pinot Meunier, Pinot Gris, Pinot Blanc, Petit Meslier & Arbane). We added the pressed skins for 17 days to a barrel aged saison/lambiek blend.." Bottled august 2021.

"BBP's first Lambic blend, brewed at Dansaert. We teamed up with David from Verger du Nord. His spontaneously fermented cider contained all heirloom varieties, 70% pears & 30% apples. Blended 50/50 with our one year old lambic (fermented in Bordeaux barrels) & aged together in a chestnut foeder for 6 months before bottling."

"Crimson (2022-2023)is our Kriek Framboise (cherry raspberry) beer. This is its second iteration.

We chose some nice barrels of 1 & 2 year old spontaneous beer to macerate on a few hundred kilos of whole sour cherries & raspberries from 2022 fruit season. The beer macerated the fruit for 9 months before bottling. Bottled: Summer 2023."

"Crimson is our kriek framboise blend. We aged 1 year old spontaneously fermented beer on 830 grams per litre of sour cherries for 6 months. Before bottling we blended another Spon beer aged on 300 grams per litre of raspberries with the cherry beer. The final assemblage of 75% Cherry beer & 25% raspberry beer transcends both their individual selves. "

"Hard Graf is a collaboration with friends Hannah & Shane from Spontaneous Deuce. A blend of L&L spontaneous fermentation beer with their Armagh Apple Juice blend of 50% Lord Lambourne, 20% Laxton Superb, 20% Katy & 10% of an unknown variety. This Graf cider blend co-fermented & evolved in neutral wine barrels for 18 months. Notes of Rosemary, Sage, Dried Black Limes & a hint of smokey Mezcal. Truly unique & pleasantly weird! Bottled on 18th April 2021."

"Lustre - Apricot is a collaboration with our good friend Jordan Keeper. In July 2018 Jordan came to Galway & we brewed a Saison with a turbid mash, hopped heavily with HBC341 hops. It fermented & evolved in our foeder over 21 months with a mix of both of our house yeasts. In April 2020 we added 300 grams per litre of Apricots before bottling it on the 15th October 2020."

Mead with vanilla aged for 7 months in Barbedos Bourbon barrels.

Mead aged for 4 months in Jim Beam barrels.

Mead with cherries aged for 6 months in Barbedos red wine barrels.

Unblended 5 year old Lambic brewed in 2015 and bottled in 2020.

Vintage 2024

Vintage 2018. Mixed fermented barrel aged sour ale with local quinces.

"Mixed fermented sour ale, aged in puncheon with local blackcurrants. Limited edition of 250."

Barrel aged red sour ale.

Spontaneous fermented, coolshipped and aged in wooden barrels and matureed with local sour cherries. This blends contains 1,2 and 3 year old beer.

Barrel Aged Barley Wine. Bottled in November 2021 and BB November 2022.

"Een fris en fruitig fruitbier, uiteraard op basis van onze lambieken, met twee soorten fruit. Enerzijds hebben we de rode bes (60%), anderzijds de Muscaris druif (40%) met een alcohol% van 7.7"%

Sigma (Dark sour) and Phi (Blond Sour) Blended and aged with blackcurrant.

Sour version of "Cuvée de Mortagne" (Quadrupel) aged in White Port barrels. Very low carbonation - The barrel experience.

"Oude Geuze Boon Black Label Edition N°7 brengt ons terug de typische lange, droge afdronk, maar toch zeer volmondige smaak die we van Boon Black Label gewoon zijn. Met een zeer frisse citrustoets en aangename sprankeling kan je de Boon Black Label N°7 beschrijven als een elegante, vlot doordrinkbare malse Oude Geuze. Deze Editie N°7 werd gebotteld op 8 juni 2021. De assemblage is een mengeling van één, twee en drie jaar op eiken foeders gerijpte lambiek. De Oude Geuze Boon Black Label Edition N°7 is een perfect aperitiefbier. Het is zeker ook een ideale geuze om met geduld van te genieten. Hij past perfect bij visschotels, denk bijvoorbeeld aan combinaties met oesters, zalm of mosselen."
