Fauve Revelateur d'Ombres

For even more tropical indulgence, we added a coconut finish. The aging lasted 18 months in rum barrels. A rare beer, of which only 1,646 cans were produced!"

Boon Gueuze Mariage Parfait...
€ 6,67"Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime." -

BlossomGueuze is 2 to 3 year old lambic aged in wood, blended with 12 month old lambic and elderflower. DOK Don't Mention the Yeast

Wait, what, another new type of IPA?....
Northern IPA's have the clean, drinkability of a West Coast IPA, a dry and firm bitterness and a clear appearance while they benefit from the modern yeast character of the East coast styles. For long yeast character was something brewers were afraid of. Thanks to all this new yeast research, the IPA brewers world started embracing yeast again. Yeast is and always has been the soul of a beer.
This Northern IPA of 6.3% is brewed with NZ Cascade, Columbus and Motueka." -

Tilquin Meerts 2022-2023...
€ 21,55The Meerts Tilquin series was made by fermenting fruit that had already been used once. The fruit was fermented for a period of 4 months in a blend of 80% 1 year old Meerts and 20% of a blend of different 2 year old lambics. Meerts (or March Beer) is a low strength lambic, which was originally produced with the weaker wort obtained from the rinsing of the grains. Unfiltered and unpasteurized, they are refermented in the bottle. There are 4 bottles with 4 different fruits: Mourvèdre, Viognier, Gewurztraminer & Pêche Jaune

€ 20,75"For years, brewers at Goose Island have brainstormed ways to incorporate figs in Bourbon County Stout, but faced a daunting task due to their subtle flavor. After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa's childhood memories of stealing fig cookies out of her grandma's cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac's Stout was created. Highlighting the dried fried profiles extracted from the bourbon in the barrels, our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today. "
