Land & Labour Lustre - Apricot
23,25 €: 2"Lustre - Apricot is a collaboration with our good friend Jordan Keeper. In July 2018 Jordan came to Galway & we brewed a Saison with a turbid mash, hopped heavily with HBC341 hops. It fermented & evolved in our foeder over 21 months with a mix of both of our house yeasts. In April 2020 we added 300 grams per litre of Apricots before bottling it on the 15th October 2020."

18,74 €"Spon - 2 Year Blend : This is a blend of 1 - 2 year old spontaneously fermented beer. Inspired by the Lambic tradition - brewed with a turbid mash, long boil, aged hops - then cooled overnight in our coolship where it was naturally inoculated with native wild yeast - bacteria. Following the overnight cooling, this inoculated liquid was filled into rinsed - steamed neutral oak wine barrels where the beauty of spontaneous fermentation evolved over the months - years. The beer in your glass is a true wild ale. Absolute terroir. We hope you enjoy it."

5,29 €"Lervig and Slowboat have gotten their minds in sync to create a modern era Juicy IPA brewed with true Kveik yeast from Ebbegarden farm in Stordal Norway. The yeast is a perfect IPA strain due to its fruity tropical flavor it imparts as it ferments at high temperatures. We used generous amounts of Citra, Mouteka and Simcoe hops to allow the yeast to pair with each other. The beer itself is juuuicey 8,2% abv with haze and soft supple mouthfeel and balance. Tastes like a pineapple starburst, Pavlova and a Bellini cocktail all in one sip."

When we made the original Times 8, we thought we could kill craft with a beer that brought an over-the-top, 16% ABV imperial pasty stout together with a Willy Wonka assortment of vanilla, cocoa, maple syrup, butterscotch and coconut. But once again, we were mistaken – we forgot to age it in barrels. So to put the cherry on top of this ridiculous collab, we placed the beer in fresh bourbon barrels for a year to suck out all of the spicy, vanilla oaky notes and smooth, boozy finish. We’re sure you’re going to love this monster of a stout – just make sure you bring an insulin shot and a pint of Pilsner to wash it down. " -
