Originally, this beer was made for the 10 year anniversary of Moeder Lambic, with Pinot Noir grapes coming from Valentin Zusslin Estate, cultivated in biodynamic viticulture and harvested by hand on their Bollenberg vineyard."

"This is already the second collaboration with the PINTA brewery in Wroclaw. This time, we decided to conduct an experiment. The beer was fermented using Scandinavian Hornindal yeast, which is extremely interesting due to its fast fermentation rate and high temperature at which it occurs. Thanks to this, the aromatic profile is unique and full of fruity esters. We went one step further and used the kettle sour method to acidify the wort, and after fermentation, we added incredibly aromatic calamansi, coconut flakes, and vanilla. "Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime."

"Smokey Islands is the result of a collaboration with Gili Drinks. Phi was aged for several months on a Kilchoman peated whisky barrel, was blended with fresh ginger juice, some honey and pineapple pulp (400l beer/200 l juice ratio). We gave this "cocktail" some time to blend in well, resulting in a spicy fruity smoky sour. This is not just another ginger beer, with Smokey Island we once again challenge you to #dare to go wild."

A collaboration with dear friend Jan from Hibernata beer project with whom I share mutual love for delicately rustic beers. Rich, malty and vinous. Perfect cigar beer!"

"An evolution of the very first Wadesda, a blend of Jambe-de-Bois and Cantillon lambic, making the Wadesda #9 a Tripel Saison: a stronger version of the original Saisons. She is amber in colour and has those typical characteristics of Lambic: woody with a strong funky nose of Brettanomyces, with quince and fallen apples. This is followed by white flowers, old kirsch and persimmon, and even a hint of curry leaves. A very winey character, as it should be! All of this blends perfectly with the classic aromas of tripels, like pears and bananas. Her strong alcohol percentage enhances her vinous qualities and gives a certain roundness to a finale that is quite dry and almost mineral. Intoxicating and complex, but refreshing and drinkable!"
