    "In the bottles of the latest beer from the WILD series we have sealed a blend of our barrel aged Saison and super aromatic “Inka” peaches and “Lutówka” cherries. The beer owes to them not only a wonderful aroma but also a beautiful “rose” color with a small but long-lasting white head. Ends with a truly wild & funky aftertaste. This is the beer we dream to drink in these fresh early spring days. Voilá!"

    "We gathered grapes for this mixture in person from a small local vineyard located just 20 km away from the Brewery. On the same day, we merged them with the beer base and left them fermenting for more than 12 days. The beer is very similar to our favorite French wines of the "glou glou" Pet-NAT type. It is filled with aromas of cherries and red fruits, balanced with delicate nuances. It is a lively cherry-colored rose, long-lasting beer. Non-pasteurized and changing over time – ideal for bottle fermentation!"

    "“Fifteen” is characterized by a distinct aroma of plums from local orchards near Wroclaw. Its solid base is the Saison-style base aged in barrels. During the brewing of Wild #15 we used barley malt, wheat malt and oatmeal. In addition, we conditioned it in the bottle for six months to give it its unique character."

    "Crimson is our kriek framboise blend. We aged 1 year old spontaneously fermented beer on 830 grams per litre of sour cherries for 6 months. Before bottling we blended another Spon beer aged on 300 grams per litre of raspberries with the cherry beer. The final assemblage of 75% Cherry beer & 25% raspberry beer transcends both their individual selves. "

A blend of L&L spontaneous fermentation beer with their Armagh Apple Juice blend of 50% Lord Lambourne, 20% Laxton Superb, 20% Katy & 10% of an unknown variety. This Graf cider blend co-fermented & evolved in neutral wine barrels for 18 months. Notes of Rosemary, Sage, Dried Black Limes & a hint of smokey Mezcal. Truly unique & pleasantly weird! Bottled on 18th April 2021."

    "In collaboration with Wendy & Felipe of Fox Tale Fermentation Project, we've blended together our one-year-old foeder aged saison with their locally sourced Ume plums. After first allowing the plums to undergo native fermentation by their own microflora, we then blended beer onto the fermenting fruit for a three month maceration. The resulting beer blooms with notes of candied passionfruit, strawberry, and floral jasmine with a soft, creamy acidity. From us to you, we present Poetic Memory."

    "As we more fully embrace the characteristics of each fruit that we source, we have somewhat reimagined our fruited Farmstead ales. To more prominently represent those fruits and the variation of each harvest season, we let the fruit guide us in selecting from our range of barrel-aged Farmstead ales—sometimes this will be a single base beer, other times it may be a blend of different barrels—all with the goal of best expressing the fruit’s unique aspects. For this entry, we paired a blend of our Farmstead ales—all of which rested in oak for more than a year—with Balaton cherries from nearby Burtt’s Orchard in Cabot, Vt. This harmonized blend rested in the bottle for over a year, achieving its balance of complex acidity and seasonal fruit rep."

    "This is the third entry in our novel exploration of blended beers, aging techniques, and often unexplored ingredient combinations. In the summer of 2018, we brewed a beer with a base composition of 20% Vermont buckwheat honey, 48% organic buckwheat, 32% malted barley, and cascade hops. After a year of respite in wine barrels, the beer rested in the bottle, moving through its own hopeful arc towards achievement over the course of nearly three years. The result is a delicate, floral expression, displaying differing facets of this ancient grain within the context of our Farmstead® ale framework."
