Oud Bruin where the wort was boiled for 16h instead of the classic 1.5h which give more caramelised aromas.

First batch boiled on 16th December 2016 (for over 16 hours) and bottled in November 2017.

Oud Bruin matured aged for at least a year in oak barrels and then several months with fresh peaches.

"This limited beer is the mother beer of our classic Oud Bruin. It's a single cask. Other than the classic, it isn't blended with young beer. the foederbier aged for 2 years on big 40 or 50hl barrels. Hints of red fruit, woody with a touch of curry"

Brewed in Autumn 2019 and aged for 16 months in oak barrels to develop the funky / sour characteristics before being bottled and aged for another 10 months.

Tucked in the furthest reaches of the brewery for years, a special blend of several of our mixed-culture projects has come to life with the addition of a brown strong ale and cherry juice from Telemark. Sweet notes of red fruits and vanilla meld seamlessly with wood and caramel flavours and a distinct sourness."

Imperial Flanders Red aged in french oak and Chilean Alerce then aged with sour cherries.

"This beer is created by adding green walnuts to beer that was aged on wooden barrels for at least one year. We picked the nuts in july last year in the garden of a friend. They were harvested when they were still greeen before the wooden shell started to appear. The young fruit gives a herbal, nutty aroma to the beer. The subtle bitterness balances the fresh sourness of the Oud Bruin. Go nuts and try this interesting infusion."

"The second edition of our dry-hopped red beer, Clomp. This blend was made from two brews produced in May 2019 and June 2020. Fermentation took place in red Bordeaux barrels for three and two years respectively. The rich red beer benefitted from a fairly long time in barrel to build the acidity and tannin required to balance the sweetness of the malts. To enhance the bright fruit aromatics present in the base beer, the finished blend was dry-hopped with whole-leaf US grown Chinook, from the latest harvest. The finished beer conditioned in bottle for a (relatively) brief four months before release, to allow enjoyment of the fresh the hop aromatics. As with all our dry-hopped beers, these aromatics will evolve quite dramatically over time."

"Crianza belongs to the family of Flemish Red-Brown ales. Born out of a mixed fermentation, she spent more than a year in oak barrels. Her body has copper reflections, and her aspect is limpid. Her foam is beige and creamy, with a nice hold. She smells like Northern cherries, with a woody and winey accent, and a slightly animal touch given by the Brettanomyces yeast. In the mouth, these flavors are completed by stewed apples, notes of Agen plums, blackberries, spices (cinnamon, cloves, licorice), and a very lightly caramelized touch of malt and biscuit. Her slightly sour character makes her surprisingly refreshing."

"Dit gelimiteerde bier is het moederbier van onze Oud Bruin. Het is een single-cask, wat betekent dat het bier geen blend is van verschillende vaten, maar volledig uit één vat komt. Anders dan de klassieker is het ook niet geblend met jong bier. Het Foederbier rijpte 2 jaar op grote houten vaten van 40 of 50 HL. Foederbier heeft meer hints van rood fruit en is meliger op zuren. Het aroma is fruitig, houtachtig met een vleugje kerrie."

"This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples."
