Saison brewed with Triticale (hybrid of wheat (Triticum) and rye (Secale)) and fermented with Kveik andBrett and aged oro 7 months in red wine barrels from Domaine Monthélie Douhairet Porcheret.

Wheat ale feremented naturally with feshly pressed Gamay wort from Domaine Cinq Peyres in France. best before is 10/2023

Aged on Puligny Montrachet Barrels for 2,5 years. best before 11/2023

Vintage 2022. "Père Noël is a Christmas ale, though very different from any other Christmas ales you might know. While most Christmas ales are rich & sweet, this one is amber-coloured, 7% vol. Alc. strong and tastes quite bitter. The complex taste is completed with the addition of liquorice. In the recipe we can also find pale malt, Munich malt, Caramel malt, Brewers Gold hops and Hallertau hops."

"The first of three collaborations with Phantasm, using this ingredient to achieve an extraordinarily aromatic NEIPA with a strong tropical fruit aroma. By adding Phantasm to the whirlpool and the early addition of dry hopping, we were able to give an extra boost and achieve an amazing aroma result. Phantasm is a powder derived from Marlborough Sauvignon Blanc grapes from New Zealand, rich in thiol precursors known to create aromas of citrus, guava and passion fruit."

Blond beer co-fermented with apple juice and with Champagne yeast.

Durant l'automne dernier, notre ami Théo du domaine Lissner nous a fait l'immense honneur de nous faire parvenir du Gewurztraminer du mythique terroir d'Altenberg, classé dans les grands crus d'Alsace. Nous les avons macérés dans notre saison de foudre avec des herbes sauvages de la région, avant un léger passage en barriques de quelques mois.

"Macération de marcs de Gewurztraminer du domaine Lissner sur notre saison de foudre en méthode solera. Grâce à notre ami vigneron Théo Schloegel, nous avons pu récupérer les marcs de raisins fraîchement pressés en direct de Wolxheim dans un temps record. Encore légèrement juteux et d'une propreté à l'image de leurs vins, ces marcs ont apporté une magnifique complexité aromatique et une très jolie robe rosée à cette bière dont nous sommes tout particulièrement contents."
