Saison van de Bruwer is a spelt Saison, dry-hopped and fermented with added Brettanomyces. It is blond, opalescent; its very persistent foam is creamy and fine. Very aromatic and fruity, its nose is reminiscent of pineapple, quince, apricot, and gooseberry. A ‘funky’ touch, typical of Brettanomyces, completes the picture. In the mouth these same flavors are intensified and accompanied by notes of cereals, a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter — typical character traits of the 1920s Saisons. bbd 18/11/2024

"The annual tradition of launching the Baltic Porter in January has been fulfilled. This year's Baltic Porter Festival will be celebrated with one of the three versions of this style performed by us. We divided the excellent base, which was aged at low temperatures for almost half a year, into three parts. We have added something special to each of them. What strongly distinguishes the Baltic porter from the imperial stout is the balance shifted towards caramel malts. A natural combination is the addition of roasted caramel (caramelized sugar) with caramel beer. Often, such compositions end up suppressing one of the ingredients, but this time we managed to find a golden balance. Season 2020-2021 Assemblage #1. bottled on 08/12/2020. This Oude Geuze has been blended with lambikken from eight different barrels and originating from eight different brews. More than 60% of the blend consists of 3 Fonteinen lambic, of which almost 10% was brewed with our own Brabant-grown cereals of the Finistère variety. More than 40% of the blend consists of old lambikken, of which the oldest portion was brewed in the first days of 2018."

"Our Sunstead series captures the essence of perfectly ripe stone fruits, allowing us to savor the warm flavors of summer all year long. The base beer is a blend of one, two and three-year-old Danish Wild Ales aged in Chardonnay and Monbazillac barrels. We racked this onto freshly destoned and crushed white nectarines at a rate of over 600 grams of nectarines per liter, and left it to macerate with the fruit for over a month before bottling. This complex, soft and juicy beer tastes almost like biting into a fragrant nectarine, transporting you back to the high days of summer no matter when you drink it."

Organic Oude Gueuze

"Chuckleberry is a blend of two brews produced in June and September 2019. Made from a turbid wort, using rye malt and aged hops, they started life as potential blending options for our ‘house’ beer, Running Beer. Fermentation and maturation took place in barriques which formerly housed red Bordeaux. We chose three barrels to make a blend that would best fit the fruit: relatively soft and full on the palate to accommodate the fruit's acidity and tannin, complementary aromatics from the red Bordeaux and French oak, and a balancing funk to cut (but not obscure) the fruit. The resulting blend was added to a large quantity of locally grown chuckleberries to referment for five months. The beer conditioned in bottle for a further three months."

Imperial Stout insfused with Saint Brandarius Whisky.

"A blend of Den Herberg, Lindemans and De Troch lambics. Aroma of wet farmland, medium lactic acidity, full mouthfeel, coats the tongue. Citric and grain flavours are well balanced. Very refreshing and drinkable."
