"Weird Era is our blend of Lambic inspired oak fermented ales ranging in age from 1-3 years old, or Methode Traditionnelle. Mashed with pilsner malt & unmalted wheat, it was boiled for three hours with aged whole cone hops before being cooled overnight in our coolship, & transferred into French & American oak barrels the following morning. A poignant gaze into time & place, this beer showcases four specific nights in South City St Louis. This blend is comprised of twenty-five percent three year old spontaneously fermented beer brewed on January 17th, 2019, twenty-five percent two year old spontaneously fermented beer brewed on April 20th, 2020, and fifty percent one year spontaneously fermented beer brewed on January 19th, 2022 - then packaged into green glass bottles on August 2nd, 2022 where it has been conditioning since. "

We used both one-, two-, three- and four year old lambikken, clocking the weighted average age of the blend upon bottling at more than two years, or 24 months. The oldes lambik was brewed in the first days of 2018. More than 40% of the combined grain bill was sourced in Pajottenland, with our own cereal circle. Also more than 40% of the combined hops were sourced in Belgium, with an average of 14 years of age."

We dry spiced this beer with fresh roasted coffeebeans from Crossroast, a small coffee roastery from Antwerp. After that we dry spiced it again with Cacaobeans, Vanillabeans and some fresh Cinnamon. The result is a very complex, roasty imperial stout with lots of tones of chocolate, coffee, toffee, caramel, vanilla and a little spicyness from the cinnamon. We rested this beer for 6 months on Jamaican Rum barrels. Enjoy! Label by Robin Adriaenssens from Summer's End Tattoo."

"Traditional zhug isn't a sauce, it's a fresh condiment, and it's green most of the time, sometimes red. And it's a typical Yemen thing, we've never been there. We've never actually tasted it, just imagined it. This is Tom from Bokertov who told us about it it's a big banger that's been putting everyone in agreement for a long time. He there's not much they agree on over there, apart from hummus except for hummus. And then there's the Zhug, Zhug and hummus is already a lot. Then in the manner of medieval monks who drew whales in the shape of monsters monsters and crocodiles in the shape of dragons, because they'd never seen one and were basing their opinion on reports from people who weren't at all objective... We made Zhug. From Brussels Zhug. And it's really good. So our Zhug is great on mezze, falafel and kebabs, but also on lots of other things, from Mexican tacos al pastor tacos to the most local charcuterie. In we've never produced a sauce like this, with a taste of cumin that's not at all exaggerated and a salty roundness that's hard to explain and a salty roundness that's hard to explain. Finally the result is a sauce that may be more classic than usual in the world of hot sauce, but a UFO in our line-up.. Heat 8/10." "This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples."

"Since traveling to the west coast that gave this style its name, we’ve been dreaming of the new version of American west coast IPA we came to love there: light, crisp and dry as always, still decidedly bitter, but also juicy and crushable. We took inspiration from our friends at Green Cheek and Highland Park to create our own.
