Barrel-aged wild blonde ale with Groene Bel. "The first thing you'll notice about Rust is the barrel character. Not too heavy, but woven into the fabric of the beer like a fine thread. Juicy aromas of sweet tangerine and a fresh touch of watermint create a calm, winelike structure with flavours that stay close together. Underneath are warm, malty notes that form the rich foundation of this beer. The finish has a soft echo of the Groene Bel dryhop, which lays earthy, mildly bitter notes on top of the wood tannins. Rust was aged on oak for 12 months."

"Saison des Rêves is the 2nd installment of our 10th Anniversary Collaboration series. Conceived over a series of emails with our new friend and idol Yvan de Baets we landed upon a spelt heavy saison recipe that speaks true to both of our outlooks on Saison. Snappy bitterness is coupled with a massive wave of melon and freshly cut wet grass from a dry hop of Huell Melon. Finally we naturally carbonated Saison des Rêves in cans and kegs for ultimate crushability. Drinking this beer reminds us of the freshly cut grass after a light rain of cantaloupe chunks, the first roll of a soccer ball over the morning dew on a chilly spring Midwest morning, and the version of He’s Gone from the 10/15/76 show in LA."

"Stadt Land Bier is our canvas for an easy drinking Saison. This batch was brewed with our own organic malt and Cascade and Saazer wholecone hops. Fermented with our houseculture and moderately dry hopped. This batch is now fresh and bitter with dominant grass and citrus notes. May develop complimenting sourness over the next months. "Biere de Table is one of the first non-fruit releases in the #Wild series. Brewed in collaboration with the Little Earth Project in November 2019. Our partner is a brewery located in Suffolk, famous for its historic and wild beers that are fermented with local wild yeast and bacteria. We couldn't miss this opportunity and decided that this beer would be co-fermented with our own wild yeast blend and Little Earth home strain, harvested from apple skins from their own farm in Sudbury, UK. We chose only the best barrels from this small vat, and then mixed them with 10 percent aged Saison fermented with brewing and wild strains." BB 06/2021

"Minne - Wild blonde ale with Japanese flowering quince. Minne was made with tiny quince apples from the food forest. Quince symbolises love and friendship, cherishing something or somebody, opening your heart to life. Picking the apples requires dedication, because they cling to their branches like there's no tomorrow, amid long sharp thorns. All you can do is approach them with care and respect, like you would a loved one." best before is 09/02/2023

Saison blended with lambic from Cantillon and aged in barrels. "An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character. The finish is bitter but perfectly in balance." Second blend bottled in March 2023.
