"Our first oak barrel aged beer of the year, in honor of the great Thelonius Monk. It is a Cuvée Saison aged in barrels for 1 year, same base as Jaco ("turbid mash"), long boil with old hops and raw wheat from Cal Pauet. Complex, funky and fruity with notes of wood that will be integrated."

"This is a special seasonal spring release: a Belgian style Witbier with organic oranges from the Ale&Hop farm. Brewed with a modified turbid mash and fermented with our house culture. Ingredients include: 60% organic Belgian pilsner malt, 20% Belgian wheat, 20% Spanish flaked wheat, German Perle hops, Indian coriander seeds, zest and orange juice from bitter oranges. Vintage 2023. "Père Noël is a Christmas ale, though very different from any other Christmas ales you might know. While most Christmas ales are rich & sweet, this one is amber-coloured, 7% vol. Alc. strong and tastes quite bitter. The complex taste is completed with the addition of liquorice. In the recipe we can also find pale malt, Munich malt, Caramel malt, Brewers Gold hops and Hallertau hops."

"Oud Bruin is a typical style of our region between Kortrijk and Oudenaarde. This beer is a blend of our own young and 2 year old wood aged oud bruin. For complexity we added some of the Marvelous "Jacobins Foederbier" from pur neighbors in Bellegem, brewery Vanderghinste."

Perhaps you remember Jean-Michel, a release that was blended from puncheons and dry-hopped with French Barbe Rouge. The red fruit elements of the hop varietal and the vanillin present in the wood merged together to create an astounding note reminiscent of strawberry pound cake. This convinced us to continue exploring this path in our oak program, and what led to Gus! Starting with a farmhouse ale base featuring Salish Blue wheat from Skagit Valley Malting, Gus completed primary fermentation in oak puncheons and continued to age for 7 months.
