    "Timshel reflects our pursuit of flavors endemic to Monterey County & the Salinas Valley. Each winter we brew a select few batches of spontaneously fermented beer following the Méthode Traditionnelle guidelines combining malted barley, raw wheat, and aged hops to produce a rustic wort. This wort is naturally chilled overnight in our coolship and spontaneously fermented in oak barrels by native microflora. Timshel combines our favorite casks spanning the course three different vintages, blended together, refermented on local raspberries, and naturally refermented in bottle. "For this specific Zenne y Frontera, we blended ten different lambikken, matured on both Oloroso, Amontillado, Palo Cortado and Pedro Ximénez barrels. This bouquet of sherry lambikken originate in total of ten different original barrels and nine different brews. The weighted average age of this blend upon bottling is a staggering 40 months. More than 1/3 of the lambikken was brewed with locally sourced Pajottenland grains. 100% 3 Fonteinen."

    Season 2022-2023 Assemblage #70. Bottled on 16/05/2023. "For this specific Zenne y Frontera, we blended not less than seven barrels of Oloroso from the Josefa Perez bodega. Situated in one of the oldest quarters of Jerez de la Frontera, in the shadow of the Iglesia de Santiago, most of the barrels were sold in 2006 to Urium. Today, the family keeps a low inventory of barrels and sherry to provide us with. We used lambikken originating from seven barrels and eleven brews; more than 60% of the cereals were grown in Pajottenland. The weighted average of this blend upon bottling was about 36 months. A small part of the blend was bottled on magnums."

"For the first time ever, we have blended raspberry lambic and sour cherry lambic rather than macerating both fruits together, in order to find balance throughout the increasing fruit varieties. The fruit proportion is 83% raspberries and 17% sour cherries, the lambics originate from 6 different barrels and 5 different brews (25% 3 Fonteinen lambic, 75% Lindemans)."

    Season 2019-2020, Assemblage #12. Bottled on 13/12/19."For this Hommage iteration, we blended about one third of kriekenlambik with two thirds of frambozenlambik, both macerated on stainless steel. The weighted average maceration time was four and a half months. While macerating and blending, we used lambikken originating from 4 different barrels and 6 different brews. The final fruit intensity amounts up to 413 grams of fruit per litre of Hommage. Finally, we added some honey just before bottling. 100% 3 Fonteinen."

    Season 2020-2021 Assemblage n°18 bottled on 25/01/21. "For this small-batch Frambozenlambik we macerated raspberries from Ferme Framboos for three months on one- and two-year old lambik from two different barrels and two different brews. We bottled the frambozenlambik as such, straight from maceration to bottle; no lambik was added. Don’t panic if this beer is a bit on the flat side. It is intended to be this way. The weighted average age of this frambozenlambik upon bottling was more than twenty months, and final fruit intensity is 350 grams of raspberries per litre of Frambozenlambik."

In May 2022, we invited our esteemed friends from Bofkont and Tommie Sjef to join us in Copenhagen along with base beer from what they considered to be their finest barrels, and we contributed a special blend of our one- and two-year-old Danish Wild Ale. A methodical blending and tasting session followed, where we eventually found a blend that cohesively showcases the best of each of our beers. This bottle is a combination of equal portions of the blend that were aged in Moscatel de Setúbal barrels from Portugal and Premier Cru wine barrels from Bordeaux, France for 16 months before bottling."

    "This is our collaboration with Bokke in Hasselt, Belgium. We started with our Danish Saison brewed with 25% malted oats to achieve a lush and pillowy mouthfeel. It was hopped with a heavy hand of New Zealand Wai-iti in the whirlpool for aroma, then oak fermented with our house mix of native yeast and lactic acid bacteria. We blended this hoppy oat saison with a blend of specially sourced and selected Belgian Lambics, and the final blend was aged in Amarone barrels for three years before bottling."

    Magnum. "The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose."

    The Meerts Tilquin series was made by fermenting fruit that had already been used once. The fruit was fermented for a period of 4 months in a blend of 80% 1 year old Meerts and 20% of a blend of different 2 year old lambics. Meerts (or March Beer) is a low strength lambic, which was originally produced with the weaker wort obtained from the rinsing of the grains. Unfiltered and unpasteurized, they are refermented in the bottle. There are 12 bottles with 6 different fruits: Pinot Gris, Pinot Noir, Riesling,Syrah, Roussanne and Airelle Sauvage.
