Organic Hoppy Tripel

Season 2019-2020, Assemblage #41. Bottled on 13/02/20. "The one that knows it all, still has to be born” as Armand would say. From time to time, we still get surprised by some of the results after blending lambics. Like this Golden Doesjel. While it was intended to be a Golden Blend, and despite the use of very potent jyoung lambic, the fermentation in the bottle did not continue. And it remained flat. This blend was made with lambics from three barrels, originating from three brews with three different brewers (of which 50% 3 Fonteinen brewed lambic). A nice gentle sipper."

The light red "Valantine" rhubarb is harvested in the spring. It is used for wine and now also for fermentation with lambic in wooden barrels. 45KG of fruit for 100 liters of young lambic.

Season 2022-2023. Bottled on 21/03/2023. "The foundation and our essence: lambik as it should be; pure, spontaneous and complex. For six years, three consecutive brews from March 2017 fermented and matured in the same oak barrel. This fine lambik was bottled in a dark brown bottle and finished with the most excellent cork. For even longer cellar ageing."

The HORAL Oude Geuze Megablend 2022 is a blend of young and old Lambics from all HORAL producers (Den Herberg, Hanssens, Mort Subite, De Troch, Lambiek Fabriek, Boon, Lindemans, Timmermans, Tilquin, De Cam, and Oud Beersel).

Unblended 5 year old Lambic brewed in 2014 and bottled in 2019.

Lambic matured with a fine berry selection (Blackcurrant, red currant, strawberry, raspberry, blackberry and wild blueberry). Around 300 grams of fruit per liter of lambic. BBD is 08/2025 (bottled in August 2020)

"The story behind the name is amusing: Brewing in our very first brewery in Sint-Pieters-Leeuw was entirely manual and really exhausting. For lunch, we dreamed of a light and flavourful table beer to quench our thirst... One day, Bernard had the idea to mix a Taras Boulba with an equal amount of sparkling water to make a "small beer". A super refreshing beer that wouldn’t prevent us from getting back to work in full shape! And we decided to call it the "Petit Boulba"...We reused the name as a reminder of the early days, but of course we made the beer according to a specific recipe. Petit Boulba is a blond beer with only 2.8% alcohol, with a blonde and cloudy appearance due to the use of wheat and oats. Its aroma is very floral, with notes of fresh cereals. On the palate, these aromas develop further and blend with notes of white fruits and fine herbal touches. Petit Boulba is slightly bitter and has a very dry and super refreshing finish. As spring has been waiting so long to arrive, I guess we’ll just skip it entirely and go straight into summer!"

Assemblage #26. bottled on 08/03/18. Blend made with 100% lambic brewed by 3 Fonteinen from 6 different barrels originating from 5 different brews. The 3 year old lambic accounts for almost a third of this blend.

Saison brewed with dandelions. Vintage 2023

"A thirst quenching session beer, Sour Suzy mimics a classic German brewing technique (sour mashing) to impart a light, refreshing tartness. No hop bitterness & very low hop profile. Sour Suzy is not your typical session beer – rather it delivers something a bit more obscure and intriguing. It drinks as refreshingly as a glass of lemonade. The grain bill includes a healthy portion of wheat, while citrusy hops lend bright notes to the aroma which are accentuated by the addition of Makrut lime leaves."

"Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."
