"Mills Brewing make beer with minimal modern intervention, relying on local wild yeast cultures and the influence of nature to ferment. Little Earth Project is a small and unique brewery in the Suffolk countryside using a variety of sustainable practices to brew small batch, predominantly oak aged wild and sour beers. Mire was brewed in August 2019 with LEP’s homegrown malt. It fermented for sixteen months in cider barrels with both brewer’s house cultures. The resulting beer was dry-hopped with whole leaf Goldings before seven months maturation in bottle." Botlted in December 2020.

"Ale Aged in Oak Barrels with cherries. In this blend of Funky Blender we added fresh, whole fruit at rate of about two pounds per gallon to our base beer. Each barrel is carefully hand picked to ensure it will pair perfectly with the whole fruit we are using while keeping the funky flavor. The unique lemon and lime aromas that come from the base barrels of Funky Blender harmonize with the whole fruit added."

Pink foam that not only drops off the kids for the birthday, but then sticks around for the flavor party. What? Does anyone read these? Classic Colorado plum aromas in the nose just remind me why I love plums so much, I hope we can get more this year. Low/medium acidity and rich body that makes one think it's actually sweet. "This 2 barrel blend was made with organic Red Haven peaches at a rate of 4 pounds per gallon. Big body and funky peach juiciness."

Season 2021-2022. Bottled on 28/062/2022. "For this Strenge Winter, we brewed a full malt wort with the addition of candied sugar on the coolship. This wort was brewed on April 16th 2020. We left it for more than two years to age on three different barrels. Upon bottling, we blended with some young lambik for continued bottle fermentation, as well as a small part of reduced wort from a Nocturne brew. The weighted average age of the blend upon bottling was therefore more than 23 months."

Red Wine BA Spontaneous Wild Ale with raspberries and blzck currants.

"A blend of wild ales (aged for 1 up to 4 years) with organic plums."

Collaboration with Champagne maker Romain Henin. "This vintage is a blend of a spontaneously fermented beer aged for 2 years in barrels and Pinot Meunier from Romain du terroir, in the form of marc co-fermented with the beer. We finally combined the blend with Pinot Meunier must on the day of bottling."

"Beer produced from the blending of two barrels of red wine, 2 and 3 years old, from spontaneous fermentation and mixed fermentation. Mirabelle plums from Nancy from an orchard in Yonne near the brewery were added for a 3-month maceration before bottling."

"Blend of beers fermented on apples, barrel aged and "refreshed" with more apple pomace, and various grape ales: a blend of sour beers on fresh "rosé" pomace and mourvedre fermented beer. Complex process for an extra juicy hybrid beer."

"Oranje is a bière de coupage with a touch of bitter oranges and rosemary. It’s a blend of a few of our older wild ales (aged 3 years in oak barrels) and a rustic saison to bring freshness and structure to the beer. We macerated a small amount of bitter orange peel and rosemary with the beer — just enough to add a gentle citrus aroma and subtle herbal notes, without overpowering the base."
