"A collaboration between Steven and Sam. The saison was created by Steven and was brewed in 2021. Came out under the name Down Under in a small batch. The rest was taken to the cellar. The saison was on a wine barrel for 9 months,later shortly on a maple syrup barrel. We blended this beer then with a selected Bofkont barrel. Finally it's ready to come out..Meet the barrel aged saison blended with lambic."

"During the 2020 cherry harvest, we processed 3 different varieties of cherries. This blend mainly contains Noordkriek and a small amount of Kelleris. This from local growers in the Antwerp region, a fruit region that has almost completely disappeared but has recently seen some new initiatives. The maturation took place in ex-Bourgogne and ex-Bordeaux casks. The Merlot we used is the barrel aged version of our Pet Bière 2020. After a period of 9 months in an ex-Bourgogne and ex-lambic barrel. The name of this beer was chosen just a few days before the sale, after a difficult period for many of us. 2021 will go down in history as a Bloedrood (bloody red)/gitzwart year. And also a tribute to the healthcare sector that has given blood, sweat and tears"

"1,2 and 3 year old lambic. The rhubarb lambic in this blend is from the 2020 & 2021 harvest. Due to the dry summer of 2020, this specific field only produced rhubarb in August. Before bottling we added a small amount of cardamom lambic."
