"Grisette is the little cousin to our Saison. It is brewed to drink fresh but will age nicely with our mixed house yeast/brett culture. Low alcohol, dry, refreshing, light bodied beer with notes of citrus and tropical fruit balanced with earthy continental hop character and moderate bitterness. Vintage 2024. "A re-imagining of one of the most enigmatic beers to come out of the head of Dany Prignon. Ale brewed with spices, water, barley, hops, yeast, and candy sugar. Belgian Beer Club De Heikantse Bierliefhebbers was involved in the commemoration of the "Boerenkrijg" (the Flemish peasant war against the French occupier) in 1798. In regard to the original 1998 batch, on the occasion of the 200th anniversary, Dany Prignon (Fantôme Brewery) brewed the beer Caeymaex for them. Mr Caeymaex was, at time of this war, mayor of Berlaar and leader of a small peasant army that fought with the French."

"Our first oak barrel aged beer of the year, in honor of the great Thelonius Monk. It is a Cuvée Saison aged in barrels for 1 year, same base as Jaco ("turbid mash"), long boil with old hops and raw wheat from Cal Pauet. Complex, funky and fruity with notes of wood that will be integrated."

"Cette bière est une ôde aux fermentations mixtes, une déclaration d'amour aux traditions brassicoles belges à la sauce héraultaise. La cuvée 2021 de la saison du chai est issue d'une assemblage de six de nos meilleurs tonneaux ayant accueilli les différentes bières pendant 10 mois en moyenne. Au détail : 80% de saisons bien céréalières ensemencées avec différentes souches de levures "fermières" se marient harmonieusement à 20% de bière acide de fermentation mixte. Résultat : une bière complexe, rustique, vineuse, dont la longueur appelle les discussions passionnées entre amis... Bonne soif !
