Season 2018-2019 Assemblage #56. bottled on 25/03/19. "This specific Cuvée Armand & Gaston was blended with lambikken from six different barrels and five different brews, of which the oldest was brewed in the first days of 2016, more than five and a half years prior to the release. Almost half of the blend consists of oude lambikken. This bottle has been aged for well over two full years in our own cellar, before being released."

Season 18/19 Assemblage #55. bottled on 22/03/19. Blend made with 100% lambic brewed by 3 Fonteinen from 5 different barrels originating from 5 different brews. The oldest lambic was brewed early 2016.

Season 18/19 Assemblage #41. bottled on 21/02/19. Blend made with 100% lambic brewed by 3 Fonteinen from 4 different barrels originating from 5 different brews. The oldest lambic was brewed on 24th April 2015 which brings the average of the lambics used to 23 months when bottling.

Season 18/19 Assemblage #14 bottled on 13/12/18. Blend made with 100% lambic brewed by 3 Fonteinen orignating from 6 different barrels and from 9 brews. This blend is made of 60% young lambic and 40% semi-old and old lambic.

Season 18/19 Assemblage #13. bottled on 11/12/18. Blend made with 100% lambic brewed by 3 Fonteinen from 6 different barrels originating from 12 different brews. 45% consists of semi-old and old lambic from 6 deiffernt brews.

Assemblage #81. bottled on 03/10/18. Blend made with 100% lambic brewed by 3 Fonteinen from 8 different barrels and originating from 9 brews. This blend contains 47% matured and old lambics from 6 different brews.

Assemblage #79. bottled on 26/09/18. Blend made with 100% lambic brewed by 3 Fonteinen from 6 different barrels originating from 9 different brews. 48% consists of semi-old and old lambic from 5 deiffernt brews.

Assemblage #26. bottled on 08/03/18. Blend made with 100% lambic brewed by 3 Fonteinen from 6 different barrels originating from 5 different brews. The 3 year old lambic accounts for almost a third of this blend.

Season 2021-2022. Assemblage #42. Bottled on 23/02/2022. "For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective."

Season 2021-2022 Assemblage #125. Bottled on 06/10/2022 "For this Oude Geuze, we blended six different lambikken originating from five different barrels. The lambikken used were one-, two-, three- and four-year old. This renders the weighted average age up to more than twenty-six months. Lambikken were brewed by ourselves, as well as De Troch and Lindemans."
