A blend of two varieties of cherries from Flemish fruit farmers. Fermented and matured in oak barrels

Season 18/19 Assemblage #66. bottled on 18/04/19. This specific Oude Kriek has macerated ifor 6 months with the cherries oak foeders. The lambics in this blend come from 4 different barrels and originating from 11 different brews from 3 Fonteinen. 100% of the lambics used are form 3F.

Imperial Stout brewed with speculoos cookies and lactose aged in bourbon barrels. Best before is 01/12/2023

"Light and Funky/Souor saison, fermented with a cocktail of yeast and lactic bacteria. We've added a generous amount of bergamot, yuzu and tangerine to it which gives its delicious refreshing citrus aromas and that gorgeous bright yellow color." BB is May 2022

#010 - Saison/Lambiek blend aged in oak barrels with addition of fresh locally picked elderflower, rhubarb & raspberry. Bottled december 2020; limited to 213 bottles.

#012 - "In august 2020, we handpicked biodynamically Pinot Meunier grapes from the Champagne region which we fermented into natural wine. After primary fermentation, we blended the Pinot Meunier wine with a barrel aged saison/lambiek blend.." Bottled april 2021; limited to 215 bottles.

#013 - "In september 2020, we handpicked biodynamically Trousseau grapes from the Jura region which we fermented into natural wine. After primary fermentation, we blended the wine with barrel aged saison & Dark plum lambiek." Bottled april 2021; limited to 222 bottles.

900 KG of Clery, Joly & Darselect strawberries matured in 1500 liters of lambic.

"A thirst quenching session beer, Sour Suzy mimics a classic German brewing technique (sour mashing) to impart a light, refreshing tartness. No hop bitterness & very low hop profile. Sour Suzy is not your typical session beer – rather it delivers something a bit more obscure and intriguing. It drinks as refreshingly as a glass of lemonade. The grain bill includes a healthy portion of wheat, while citrusy hops lend bright notes to the aroma which are accentuated by the addition of Makrut lime leaves."

"Then you Roast the Mallow is an imperial stout brewed with graham crackers in the mash and lactose, brown sugar and marshmallow fluff in the kettle and boiled for multiple hours. Post fermentation we steeped the finished beer on graham crackers, marshmallow and cocoa nibs which lend to the overall sweetness, but impart flavors of baker's chocolate and roasted liquid marshmallow. Drinking this beer reminds us of backyard baseball games, summertime pool visits, and Benny the Jet Rodriguez. " best before 04/09/2022

Dry hopped passion sour

"The Oude Gueuze Tilquin à l'ancienne is a blend of 1, 2 and 3 years old lambic refermented in bottle for at least 6 months. "Oude" in flemish or "à l'ancienne" in french is an appellation protected by the EU and is restricted for traditional belgian gueuze in bottle."

Saison blended with lambic from Cantillon and aged in barrels. "An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character. The finish is bitter but perfectly in balance." Second blend bottled in March 2023.

"Doorn is a barrel-aged wild dark beer with 160 g/L local black berries. A vinious, sour and rich beer filled with aromas of coconut, vanilla and dark fruit. Aged for 30 months on oak barrels. Doorn is an extremely limited single barrel release." best before is 18/11/2023

"Barrel-aged Bière de Garde with Willow Bark. After an autumn forest walk through swirling leaves and drops of rain, nothing feels better than throwing off your shoes and nestling in front of the fireplace with a glass of Sintel. This barrel-aged bière de garde was brewed with toasted willow bark for soft notes of brown sugar and clove that gently complement its smooth caramel-like maltiness. It was aged on oak for 20 months, creating a hint of vanilla from the wood. We fermented it with Mud King, a blend of wild yeasts from all over the world that composed extraordinarily fruity aromas in this beer. Sintel has a tinge of sourness and a mild bitterness that reflects the tannins of the willow bark. Its silky finish makes for a truly memorable experience." best before is 16/09/2023

Dark Strong Ale

Season 2018-2019 Assemblage #75. bottled on 16/05/2019. "This Oude Geuze is composed of almost 30% three-year old lambik and only one-year old lambik. The oldest lambik was brewed beginning of April 2016, and is almost five years old at the moment of its release. The lambikken originate from five different barrels and four different brews."

Quince symbolises love and friendship, cherishing something or somebody, opening your heart to life. Picking the apples requires dedication, because they cling to their branches like there's no tomorrow, amid long sharp thorns.
