We use a traditional no boil Berliner Weisse brewing method, 50% organic Belgian malted barley, 25% Belgian malted wheat, 25% Spanish flaked wheat, co-fermentation with our house yeast and lactic acid bacteria, then finished with a big dry hop addition (variety varies). "Strong coffee aroma, we choosed this specific coffee for its sourness. It gives some beautifull notes of raspberry, red berries, strawberries, hazelnuts, butter and citrus.
We aged this beer for 1 year on 2 Buffalo Trace Bourbon barrels and 1 Whiskey Sauterne Barrel. After 10 months of aging we added 2kg fresh roasted coffee beans (By Crossroast in Antwerp) and 15 Vanillabeans in each barrel.
After 2 more months we blended the barrels together and added some more vanillabeans.
Result is a very complex coffee stout. Lots of barrel notes, a crisp sourness of the coffee that gives the beer a high drinkability."

"Now in it's 7th vintage. We work with one of the largest mashes in our brewery to produce this delicate and decadent Imperial stout. To celebrate the 7th vintage we hand selected some of the finest small batch whiskey casks from our friends at Teeling's Irish Whiskey. This year's vintage was racked to those barrels back in October 2020."

"The Quetsche Tilquin à l’ancienne (6.4% alc/vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums in young lambics, blended with 1, 2 and 3 years lambic to reach a final concentration of fruits of 260 gr fruit per liter."

Sour ale aged for 2,5Y in red wine barrels and then aged with w. dried apricots, apples, pears, grapes and prunes. Limited to 644 bottles.

"Barrel-aged Bière de Garde with Willow Bark. After an autumn forest walk through swirling leaves and drops of rain, nothing feels better than throwing off your shoes and nestling in front of the fireplace with a glass of Sintel. This barrel-aged bière de garde was brewed with toasted willow bark for soft notes of brown sugar and clove that gently complement its smooth caramel-like maltiness. It was aged on oak for 20 months, creating a hint of vanilla from the wood. We fermented it with Mud King, a blend of wild yeasts from all over the world that composed extraordinarily fruity aromas in this beer. Sintel has a tinge of sourness and a mild bitterness that reflects the tannins of the willow bark. Its silky finish makes for a truly memorable experience." best before is 16/09/2023
