"Our first oak barrel aged beer of the year, in honor of the great Thelonius Monk. It is a Cuvée Saison aged in barrels for 1 year, same base as Jaco ("turbid mash"), long boil with old hops and raw wheat from Cal Pauet. Complex, funky and fruity with notes of wood that will be integrated."

Mix-fermentation Saison aged for 14 months in an oak barrel.

"Grisette is the little cousin to our Saison. It is brewed to drink fresh but will age nicely with our mixed house yeast/brett culture. Low alcohol, dry, refreshing, light bodied beer with notes of citrus and tropical fruit balanced with earthy continental hop character and moderate bitterness. Saison base beer aged on whole Colorado nectarines at a rate of over 2 pounds per gallon.

"Wild Rose Saison is a mixed fermentation beer using our unique house culture. Wild rose hips were added to the copper with select spices and noble hops. A lengthy fermentation in fresh red wine barriques has produced a delightful beer with notes of roses, fresh strawberries and rounded off with a subtle funk."
