    "Ceréjhe is the word used to designate cherries in Wallonian dialect. A delicate blend of saison (spring barley, Wallonian Winter barley, spelt & wheat) fermented with our own strain, 1 year old lambic and cherries. The cherries come from the lovely lands of our friends Sandra and Stephane next to the beautiful Mont Ventoux. The cherries underwent a 7 months long fermentation at cold temperature and were left intact (no pressing) during the entire process to allow the aromas to slowly diffuse into the beer. The maceration was then back blended with the base saison to reach a balance between the saison, the lambic and the cherries. Not meant to be a cherry bomb, we hope that you'll enjoy the delicate notes of these beautiful fruits, coming from an outstanding terroir. An authentic farmhouse beer, Brewed in our 800 years old farm."

    Season 2021-2022, Assemblage #51. Bottled on 17/03/2022. "For this Kweepeer, we macerated quinces from different organic fields around Flanders. We put them for almost four months on young lambik and blended with some more jonge lambik before bottling. It is hard to put a correct fruit intensity level as the massive quinces give off their flavours and aromas but do not really get disintegrated into the lambik. We did macerate 50/50 quince and lambik. So quite intense nonetheless."

    Season 2019-2020, Assemblage #33. Bottled on 29/01/20. "For this Frambozenlambik, we macerated raspberries from Ferme Framboos for four months on jonge lambik at a fruit intensity of 382 grams of raspberries per litre of lambik. Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it. 100% 3 Fonteinen."

    Season 2020-2021. Assemblage #77 bottled on 16/09/2021. "This particular Cuvée Armand & Gaston has been blended with lambikken originating from five different barrels and ten different brews. Almost 80% of the blend consists of three year-old lambik, bringing the weighted average age of this blend upon bottling to more than 26 months. We also blended in lambik originating from a Moscatel sherry barrel. About one third of the used lambikken has been brewed with Pajot-grown cereals."

    Season 2019-2020 Assemblage #80. Bottled on 14/10/2020. "For this Oude Kriek, we macerated sour cherries for almost nine months on two-year old lambik and on an oak barrel. We blended with some jonge lambik before bottling. The final fruit intensity amounts up to 375 grams of sour cherries per litre of Oude Kriek. With more than a year of bottle conditioning, the weighted average age of this blend will range around 30 months upon release. 100% 3 Fonteinen brewed lambik."

We took 300kg of Muscadis grape pomace and blended to a mixed fermentation Saison that aged 12 months in Pinot Noir barrels.     Season 2020-2021, Assemblage #78. Bottled on 21/09/2021."This Intens Rood underwent a maceration period for over four months on two year-old lambikken. We added some more jonge lambik just before bottling, bringing the weighted average age at almost 20 months upon bottling. The final fruit ratio is 432 grams of sour cherries per litre of Kriek."

    "As years passed and our oak aged beer became more robust, we discovered many unique, interesting, single barrels deserving of a special release. Barn Owl was created as a response to these lone wolves, and has grown into a diverse, ongoing series that reflects the growing diversity of our barrel program. The name is a nod to the wise and exacting animal that keeps watch over the farmhouse (er..industrial warehouse), and the one-off creations are released sporadically throughout the year, just as soon as we deem the barrels ripe for the picking. No. 23 is a blend of pale ales aged in American oak foeders, and refermented on two varieties of peaches.".

Another four different lambics from another two barrels were used in the blending process. The final fruit intensity was about 442 grams of sour cherries per litre of Intens Rood.

We used both two- and three-year old lambikken for both macerating and blending, originating from four different barrels and ten different brews. The weighted average age is almost 26 months, and the final fruit intensity clocks in at 319 grams of sour cherries per litre of Kriek."

    "We gathered grapes for this mixture in person from a small local vineyard located just 20 km away from the Brewery. On the same day, we merged them with the beer base and left them fermenting for more than 12 days. The beer is very similar to our favorite French wines of the "glou glou" Pet-NAT type. It is filled with aromas of cherries and red fruits, balanced with delicate nuances. It is a lively cherry-colored rose, long-lasting beer. Non-pasteurized and changing over time – ideal for bottle fermentation!"

    Season 2022-2023 Assemblage #46. bottled on 16/02/2023. "For this Oude Geuze, we blended lambikken brewed by three different breweries. Half of the lambikken, coming off five different barrels and six different brews, have been brewed by us. The oldest lambik, making up almost 40% of the blend, was brewed in April 2018. This elevates the weighted average age of the blend to more than 38 months."
