"Off the Rack Paragon represents the finest barley wine we have to offer. After ageing in Tennessee whiskey barrels for 16 months, we selected only our favourite barrels for this edition. Coconut, vanilla, bourbon, toffee, prunes, chocolate, oak, and caramel all interplay to deep complexity while remaining in balance with one another. Serving at room temperature allows even more layered nuances to shine through."

"Paragon is one of if not our most cherished products. We take this one step further by a process of selecting aside the best barrels of the 100’s of them aging in our rackhouse. We spend the time to sample each barrel and judge the quality, a consensus between the barrel managers and brewers is made and these barrels are set aside while we seperate Paragon barrels. This years version is noted a nice balance of sweet and alcohol, with all the characteristics of slight dark chocolate, roasted vanilla, dried fruits, Toffee, and bourbony oak."

This Norwegian sour was brewed with locally foraged juniper and fermented with Kveik yeast, then aged in a Foeder for 18 months with our house mix culture. When we made the original Times 8, we thought we could kill craft with a beer that brought an over-the-top, 16% ABV imperial pasty stout together with a Willy Wonka assortment of vanilla, cocoa, maple syrup, butterscotch and coconut. But once again, we were mistaken – we forgot to age it in barrels. So to put the cherry on top of this ridiculous collab, we placed the beer in fresh bourbon barrels for a year to suck out all of the spicy, vanilla oaky notes and smooth, boozy finish. We’re sure you’re going to love this monster of a stout – just make sure you bring an insulin shot and a pint of Pilsner to wash it down. "

"Ruby in colour with hot pink foam, this beer looks as good as it tastes. Blueberries and vanilla notes dominate and act as a counterbalance to the tart notes from our house mixed fermentation base that’s been maturing in an ex-red wine foeder for 6 months."

"We brewed a traditional turbid mash as they would do in most Lambik breweries in Brussles to generate lots of starch for the Brett to work on slowly over a year of fermentation in our Foeders, giving a soft funkyness light sour edge with a balance of fruit forward sweetness from the apricots we added 1 month prior to packaging."

"According to some, humanity is born with a built-in urge to do bad things. In that spirit, we tried to do something good when we designed this beer, using a massive malt base to create depth and complexity with the right amount of roasted malt and caramel notes. Upon that base we layered more than twice the amount of cocoa nibs that we’ve ever used in a beer before, along with a healthy dose of vanilla. What came out of the tank is a full-on dark chocolate parade for the palate – combining accents of milk chocolate,

"Lervig and Slowboat have gotten their minds in sync to create a modern era Juicy IPA brewed with true Kveik yeast from Ebbegarden farm in Stordal Norway. The yeast is a perfect IPA strain due to its fruity tropical flavor it imparts as it ferments at high temperatures. We used generous amounts of Citra, Mouteka and Simcoe hops to allow the yeast to pair with each other. The beer itself is juuuicey 8,2% abv with haze and soft supple mouthfeel and balance. Tastes like a pineapple starburst, Pavlova and a Bellini cocktail all in one sip."
