    "ZENNEGASH is a collab with our friends—and excellent brewers—of Allagash Brewing Company from Portland, Maine in the USA. Little side note: the first ever collab we did was with them in 2011: the Very Spéciale Belge. We didn’t have to look far to find a name for the beer. We simply combined the two rivers we both owe our names to: the Allagash river, and our good old Zenne! This time we brewed a wheat beer (the specialty of Allagash!), dry hopped with both American and European hops. We made two versions: one bottled version, refermented with Brett-yeast, and one clean version in kegs."

    "The Brett Porter is inspired by the old London Porters, superstar beers of the 1800s, which were kept in huge wooden casks in which Brettanomyces yeasts grew. It was not barreled, but co-fermented with our house Brettanomyces, and brewed from magnificent English specialty malts. Pours black with a ruby tint. Its foam, dark beige, is fine and persistent. Brettanomyces are present on the nose, giving it a vinous character with very ripe cherries like an old kirsh, and a little leather. A roasted and slightly smoky touch completes the picture. These aromas are found in the mouth, with added notes of mocha, cocoa powder and prunes."

    "The second edition of our dry-hopped red beer, Clomp. This blend was made from two brews produced in May 2019 and June 2020. Fermentation took place in red Bordeaux barrels for three and two years respectively. The rich red beer benefitted from a fairly long time in barrel to build the acidity and tannin required to balance the sweetness of the malts. To enhance the bright fruit aromatics present in the base beer, the finished blend was dry-hopped with whole-leaf US grown Chinook, from the latest harvest. The finished beer conditioned in bottle for a (relatively) brief four months before release, to allow enjoyment of the fresh the hop aromatics. As with all our dry-hopped beers, these aromatics will evolve quite dramatically over time."

    "An Oak-Aged Farmhouse Ale Dry-Hopped with Idaho Gem While hop-forward beers and oak-aged beers may seem to be in different veins, we’ve particularly enjoyed how these elements play off one another in our saisons. Perhaps you remember Jean-Michel, a release that was blended from puncheons and dry-hopped with French Barbe Rouge. The red fruit elements of the hop varietal and the vanillin present in the wood merged together to create an astounding note reminiscent of strawberry pound cake. This convinced us to continue exploring this path in our oak program, and what led to Gus! Starting with a farmhouse ale base featuring Salish Blue wheat from Skagit Valley Malting, Gus completed primary fermentation in oak puncheons and continued to age for 7 months.     Season 2021-2022. Assemblage n°59. Bottled on 08/04/2022. "For this particular Platinum Blend, we blended lambikken originating from five different barrels and eight different brews. This blend is a beast; we used almost 45% of four-year-old lambik (all brewed in April 2018) and an equal amount of two-year-old lambik. the This way, the weighted average age of this very Oude Geuze is more than 33 months upon bottling. Of all cereals used in these brews, almost 45% were sourced from our own cereal circle in Pajottenland."

    "St Henry is an Australian Wild Ale made with apricots. It is named for Chris and Emily’s second son. Saint Henry II was a Holy Roman Emperor during the 11th century. In 2021, St Henry was made by blending barrel aged golden mixed culture fermentation ale with 1060kg of fresh, whole, tree ripened Robada apricots from Yarralee Orchard in Kelso, NSW."

    "Meager Portmanteau is a blend of Primitive's three-year, MT spontaneous beer refermented with juicy Colorado peaches, and Cellar West's oak aged Meager - a funky little table saison with Colorado grain. The marriage of these two (one mature & complex, one young & lively) fashions a delightful blended beer representative of both breweries' makeup. Delicately tart, laden with notes of ripe peach & oak, equal parts carefree & complex. The blend was given delicate Orange Blossom Honey from Bee Squared Apiaries to naturally condition and develop in green, corked & caged 750mL bottles for many months. Meager Portmanteau is finally ready to share! We love the honey’s delicate floral addition to the already intense bouquet on the nose.?."
