€24.31Season 2019-2020, Assemblage #33. Bottled on 29/01/20. "For this Frambozenlambik, we macerated raspberries from Ferme Framboos for four months on jonge lambik at a fruit intensity of 382 grams of raspberries per litre of lambik. Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it. 100% 3 Fonteinen."

€26.71Season 2021-2022, Assemblage #51. Bottled on 17/03/2022. "For this Kweepeer, we macerated quinces from different organic fields around Flanders. We put them for almost four months on young lambik and blended with some more jonge lambik before bottling. It is hard to put a correct fruit intensity level as the massive quinces give off their flavours and aromas but do not really get disintegrated into the lambik. We did macerate 50/50 quince and lambik. So quite intense nonetheless."

"This particular Cuvée Armand & Gaston has been blended with lambikken originating from five different barrels and ten different brews. Almost 80% of the blend consists of three year-old lambik, bringing the weighted average age of this blend upon bottling to more than 26 months. We also blended in lambik originating from a Moscatel sherry barrel. About one third of the used lambikken has been brewed with Pajot-grown cereals."

Half of the lambikken, coming off five different barrels and six different brews, have been brewed by us. The oldest lambik, making up almost 40% of the blend, was brewed in April 2018. This elevates the weighted average age of the blend to more than 38 months."

€19.79Season 2019-2020 Assemblage #80. Bottled on 14/10/2020. "For this Oude Kriek, we macerated sour cherries for almost nine months on two-year old lambik and on an oak barrel. We blended with some jonge lambik before bottling. The final fruit intensity amounts up to 375 grams of sour cherries per litre of Oude Kriek. With more than a year of bottle conditioning, the weighted average age of this blend will range around 30 months upon release. 100% 3 Fonteinen brewed lambik."

We used both two- and three-year old lambikken for both macerating and blending, originating from four different barrels and ten different brews. The weighted average age is almost 26 months, and the final fruit intensity clocks in at 319 grams of sour cherries per litre of Kriek."

Barn Owl was created as a response to these lone wolves, and has grown into a diverse, ongoing series that reflects the growing diversity of our barrel program. The name is a nod to the wise and exacting animal that keeps watch over the farmhouse (er..industrial warehouse), and the one-off creations are released sporadically throughout the year, just as soon as we deem the barrels ripe for the picking. No. 23 is a blend of pale ales aged in American oak foeders, and refermented on two varieties of peaches."

La Sambre Ceréjhe -...
€28.79"Ceréjhe is the word used to designate cherries in Wallonian dialect. A delicate blend of saison (spring barley, Wallonian Winter barley, spelt & wheat) fermented with our own strain, 1 year old lambic and cherries. The cherries come from the lovely lands of our friends Sandra and Stephane next to the beautiful Mont Ventoux. The cherries underwent a 7 months long fermentation at cold temperature and were left intact (no pressing) during the entire process to allow the aromas to slowly diffuse into the beer. The maceration was then back blended with the base saison to reach a balance between the saison, the lambic and the cherries. Not meant to be a cherry bomb, we hope that you'll enjoy the delicate notes of these beautiful fruits, coming from an outstanding terroir. An authentic farmhouse beer, Brewed in our 800 years old farm."
