    Season 2021-2022, Assemblage #77. Bottled on 25/05/2022."For this Aardbei, we macerated Huldenberg strawberries on two-year old lambik, and matured it further on a small oak barrel, and blended it with three-year old lambik. Maceration and maturation took over six months, rendering the weighted average age of this blend to over 25 months. The final fruit proportion is 505 grams of strawberries per litre of Aardbei. Of the grains that we used in brewing, more than one third is sourced within our own Cereal Collective. Small batch blend. 100% 3 Fonteinen."

    Season 2021-2022, Assemblage #16. Bottled on 11/01/2022. SBottle count: 858. "For this specific Braambes, we macerated whole blackberries on two- and three-year old lambik for almost four months. We blended with some young lambik right before bottling for continued bottle fermentation. This way, the weighted average age of this blend surpasses 29 months at the moment of bottling. The final proportion of fruit used is 398 grams of blackberries per litre of Braam. The lambikken used originate from four different barrels and ten different brews, of which the oldest was brewed in November 2018."

    Season 2019-2020. Assemblage #85. Bottled on . on "This Doesjel was bottled on the 1st of December of 2020 and was intended to be an Oude Geuze. Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release. The oldest lambikken were brewed at the beginning of 2018. This is the first Doesjel in 75cl bottles since 2006."

    Season 2020-2021 Assemblage #1. bottled on 08/12/2020. This Oude Geuze has been blended with lambikken from eight different barrels and originating from eight different brews. More than 60% of the blend consists of 3 Fonteinen lambic, of which almost 10% was brewed with our own Brabant-grown cereals of the Finistère variety. More than 40% of the blend consists of old lambikken, of which the oldest portion was brewed in the first days of 2018."

    Season 2022-2023 Assemblage #11. bottled on 24/11/2022. "For this specific Oude Geuze, we blended lambikken from three different barrels and six different brews, brewed by both Brouwerij Lindemans (33%) and ourselves (67%). More than half of the lambikken were two-year and three-year lambikken, rendering the weighted average age of the blend upon bottling to more than 22 months. All cereals used with the 3 Fonteinen brews were sourced in our own Cereal Collective."

    Season 2019-2020 Assemblage #46. Bottled on 20/02/2020. "This Oude Kriek is typified by a long maceration of six and a half months on oak barrels. While most of the sour cherries were macerated on toasted oak, we decided to blend these to an Oude Kriek rather than a Robijn as we deemed the toast characteristics are more subtle. We used five different lambikken from seven different brews. We let this Oude Kriek, with a 32% fruit intensity, settle for well over a year before releasing it. This way, the weighted average age of this bottle is well over 30 months when released."

    Season 2022-2023, Assemblage #22. Bottled on 05/01/2023. Bottle Count: 807 "For this Pruim, we macerated Opal plums from De Kleinaart in Limburg - a small orchard with organic plums. Maceration happened on young lambik, and blended with three-year old lambik. The lambikken originated from two different barrels and five different brews. We macerated for almost six months, rendering the weighted average age to more than 22 months. The final fruit proportion is 477 grams of plums per litre of Pruim. Almost 60% of the cereals used while brewing, were sourced in our Cereal Collective. 100% 3 Fonteinen."

    "As part of the charity auction during the Denver Rare Beer Festival we offered up a brew day on our copper kettle. Our new friends Malia and Bryson Dunn were the lucky winners of that auction. Together we created Hop Farm. We took a straight forward 50/50 malt bill of wheat and pilsner malt and added eight hop additions during the boil. We chose the hops for their aromatic properties, not their bittering characteristics. This beer shows how you can layer in amazing hop character without creating a bitter hop bomb. Enjoy!"

    "Intermodal is our very first 100% spontaneously inoculated wild beer, created in a style inspired by traditional lambic producers. This particular Intermodal is our first three year blend, with spontaneously fermented beer from 2020, 2019 and 2018.
